Cauliflower fritters!

I made a batch of these yesterday and took some to lunch today, but they were so damn good hubz asked me to make them again and I had absolutely no problem doing so!

These remind me of latkes or potato pancakes and eating them with my Jewish friends/coworkers during their holidays.

These are super delicious and surprisingly really filling!

Ingredients:

1/2 head of cauliflower (cut into florets and steamed for 5 min until tender crisp) 1 large egg 1 cup shredded cheddar cheese 1/2 green bell pepper (diced) 1/2 small onion (diced) 1 tablespoon minced garlic Salt and pepper to taste Oil for frying

Directions:

Saute peppers with onions and garlic for a couple of minutes until soft.

1) place steamed cauli in a large bowl and mash with a fork until it almost resembles rice. Add all remaining ingredients (except for the oil, duh) and combine well.

2) heat oil in a large heavy skillet. Form cauli mixture in your hands into a patty and fry for 2-3,minutes on each side. Do not mess with them while frying or you’ll risk them falling apart. This gives the cheese the time to melt and form a nice glue for the cauli.

3) repeat until you’re out of caulk mixture and place on paper towels to drain excess oil.

4) enjoy!!
