Vanilla Bean Peach Ice Cream
🛒 Ingredients Ice Cream Base
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 vanilla bean, split and scraped
or 2 teaspoons vanilla bean paste
1/4 teaspoon salt
5 large egg yolks Peach Swirl
2 cups fresh peaches, peeled and diced
1/4 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon cornstarch mixed with 1 tablespoon water 👩🍳 Directions 1️⃣ Make the peach swirl
Add diced peaches, sugar, and lemon juice to a small saucepan. Cook over medium heat for 6–8 minutes, stirring often, until the peaches soften and release their juices. 2️⃣ Thicken the peaches
Stir in the cornstarch mixture and cook for 1–2 minutes until glossy and slightly thick. Let cool completely, then refrigerate. 3️⃣ Heat the cream base
In a saucepan, combine heavy cream, milk, half of the sugar, salt, vanilla bean seeds, and the vanilla bean pod. Warm over medium heat until steaming, but do not boil. 4️⃣ Whisk the yolks
In a bowl, whisk egg yolks with the remaining sugar until smooth and slightly pale. 5️⃣ Temper the eggs
Slowly pour a little warm cream mixture into the egg yolks while whisking constantly. Then pour the yolk mixture back into the saucepan. 6️⃣ Cook the custard
Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Do not boil. 7️⃣ Chill the base
Remove the vanilla bean pod. Pour the custard through a fine strainer into a clean bowl. Cover and chill for at least 4 hours, preferably overnight. 8️⃣ Churn
Churn the chilled base in an ice cream maker according to the machine instructions. 9️⃣ Add the peach swirl
Spoon a layer of ice cream into a freezer-safe container, add peach swirl, then repeat layers. Gently swirl with a knife. 10️⃣ Freeze
Freeze for 4–6 hours, or until firm. Serving Idea
Serve in bowls or cones with extra peach pieces, crushed vanilla wafers, or a drizzle of peach syrup. Storage
