homemade honey oat bread i tried, sorry out of wax paper. it was pretty good, I ended up putting too much of the honey/butter mixture on top and it kind of pooled up on the bottom and burnt, that didn’t taste too good, but the rest of it was delicious.

Crockpot Rummy Red Beans and Brown Rice
2 cans red beans
1 can diced tomatoes
2 tablespoons minced garlic
1/4 cup diced onions
1 cube chicken bouillon
1 cup boiling water
1/2 cup Captain Morgan’s Spiced rum
1 kielbasa sausage
2 tablespoons tomato paste
2 cups brown rice
Salt, Pepper, Creole Seasoning, Crushed Red Pepper to taste
So I came home from a fun weekend in Miami with the girls and wanted to make something yummy and easy that would help to soak up the excess of the last few days. *Disclaimer...this is in no way healthy, but I was not in a mood to care much about that at the time*
Saute onions and garlic and sausage in medium frying pan until the onions are see through to brownish and the sausage is nicely browned, set aside.
Dissolve a cube of bouillon (I used chicken flavor because it was what I had on hand, but beef or vegetable would be delicious, too) in 1 cup of water.
Pour broth into your trusty crock pot with tomatoes, tomato paste, and rum.
Let simmer for 15-20 mins, then add in onions, sausage and beans (without the liquid in the can)(And if you’ve got the time, dry beans are fantastic, too, this was about easy though).
Season to taste.
Cook rice separately.
I wanted to eat within a 2-3 hour window so I set my crock pot to high, if you’ve got more time, go with low and let it simmer as long as you can. It can only get better.
Serve beans an sausage over rice and enjoy! Makes fantastic leftovers, too!
