Tortilla Pizza
This is my new favorite lite pizza for a small dinner (best paired with salad or other veggie side) or a midnight snack. It’s made with a tortilla as the crust.
Ingredients: 1 flour tortilla (I use gluten free Mission tortillas) 2 Tbsp. pizza sauce ¼-1/3 cup low moisture mozzarella Toppings of your choosing
Instructions: Heat up a cast iron skillet or other skillet and place tortilla in the middle. Spread pizza sauce evenly over the top. Sprinkle cheese. Add toppings (making sure not to overload with toppings as it’s a very thin crust). Cook until the crust is browned and slightly crispy. Place entire skillet in oven on broil for a couple minutes or cover on stove top with lid to get cheese nice and melty. Enjoy!
Approx. 300-350 calories for entire pizza
36 calorie peanut butter cookies
Ingredients:
•1 cup of peanut butter(i use walden farms peanut butter bc it has 0 calories & so yummy!)
• 1 cup of sweetener
• 1 tsp baking powder
• 1 egg

• preheat oven to 350°
•mix until all ingredients are combined
• put on a tray with a baking sheet or something to not make it stick
• put in oven for 10 minutes
