Nachos - With and Without Beef
Banana Fritters
Ingredients:
1 Whole Banana
1/2 Cup Flour
1/2 Cup Sugar
Tbsp Vanilla Extract
Pinch Salt
Jamaican Style Bruschetta
Ingredients:
1 whole tomato
boneless salt fish (salted cod)
Jamaican water crackers
pinch of black pepper
hot scotch bonnet pepper (optional)

Method:
1. Place a small piece of salt fish in some water to soak.
2. Dice half of a whole tomato (medium to small chunks)
3. Place about 8-10 crackers on a plate
4. After the salt fish has fully soaked. Wash and add fresh water to a small pot, then put fish to boil for about 10min
5. Once boiled, softened, and cooled break apart the salt fish with fingers.
6. Add a little black pepper and a small piece of scotch bonnet pepper (finely diced) to the salt fish
7. Mix together then add to diced tomatoes
8. Use a small spoon and add the mixture to top of crackers
9. In a small pot, warm some canola oil until it comes to a slight boil.
10. Add small amounts to the top of the tomato and crackers. Just enough to soften the tomato.
11. Let cool and enjoy ^_^
