for pad thai:
one packet of zucchini noodles (46 cal)
225g of prawns/shrimp or your choice of protein (200 cal)
teaspoon of minced garlic (5 cal)
½ red bell pepper, sliced and seeded (18 cal)
2 spring onions, sliced (16 cal)
1 large egg (72 cal)
½ teaspoon of sesame seeds to serve (optional) (8 cal)
for the sauce:
two tablespoons of rice wine vinegar (2 cal)
two tablespoons fish sauce (12 cal)
one teaspoon gf soy sauce (3 cal)
1 teaspoon chilli paste (10 cal)
1. in a small bowl, combine sauce ingredients (rice wine vinegar, fish sauce, soy sauce, chilli paste)
2. cook zucchini noodles as directed and set aside
3. in a medium size pan, add garlic, prawns, bell pepper, and spring onions and cook through on medium-high heat
4. add in egg and stir through until egg is completely cooked
5. add zucchini noodles to the pan and add the sauce prepared earlier, cook until zucchini noodles are heated through
6. Split into two small bowls and sprinkle your sesame seeds on top to serve. enjoy! :)
