I think one of the major reasons that Gojo still continues teasing & messing with Utahime is due to the changes that came with Geto's betrayal.

Until now Satoru Gojo had been this carefree teenager at the Jujutsu High, with one person who could match his beat and even put him in his place.

But the moment Suguru is gone, the world has changed drastically. And even as Gojo tries to cling to his sanity, to the little things he didn't cherish before..he notices everyone's just taken a different road.

Yu Haibara is dead.

Nanami has dropped being a Sorcerer.

Shoko has buried herself in her medical field.

Gone are the reckless days of youth. And notice how much Gojo stresses on the fact that no one should take away the youth from the young.

So even as Gojo moves forward, becomes a teacher to shape the coming generations, the one thing that hasn't changed is his unusual bond with Utahime. He still riles her up and she still fires back with the same vehemence. She is the one constant he still has in his life as the honored one and i think he wants to hold onto that.
