How do you store mushrooms without them drying up or getting slimy? Wash? No wash? In fridge? Outside fridge? Is it okay to freeze them?

Mushrooms are short-lived, so buy what only what you intend to use in the foreseeable future. Try not to get them wet, and when washing them, dampen a paper towel and rub off any excess gunk on their caps. Don't run them under water because of how porous they are. Keep 'em in a paper bag in the veg drawer of your fridgie for best storage!These are funny questions. I like them.

How to cook things like lentils, quinoa, millet, brown rice, cous cous, and orzo without burning any to the bottom of the pot?

2:1 water to grain ratio, (usually)! Keep an eye on that pup, but you'll only want to have the stove on high for about 5-8 minutes when you first put the two in the pan. When it's boiled for those few minutes, reduce the heat to low (1-2 for stovetops with dials) and let simmer covered with a lid for another 12-20 minutes, depending on the grain. The goal is to have the water completely cooked up and off. I like to use cooking stock (chicken, veg, mushroom, what have you) in lieu of plain water. You can just throw a bouillon cube into the water when you first start cookin' if you're lacking a liquid or concentrated stock base. Also, I use that initial few minutes that the pot is on the stove to add any kind of herbs and/or seasonings. Grains like wheat berries, quinoa, barley, etc, benefit from being toasted in a dry pan on medium heat until becoming fragrant before cooking them. Just swill the grains around until they get a little golden and smell nutty. They are mo' tasty that way.Thank you for the question! Keep 'em coming, kids!

Hi Cate! my name's Jen, I'm a senior illustration major at the school of visual arts, nyc, I saw one of your illustrations with an article from the Tablet facebook page and checked out your website, i LOVE your work! there's such a fun fluidity to it which is what I hope to eventually have in my own illustration as well. I was wondering, do you mostly work digitally or traditionally? thanks so much for your time!

Oh! Hi, babe! Just saw your love note! I am very flattered to hear your sweet words. (SVA sent my little heart a-fluttering when I was searching around! Good job, and congrats!). I work with both! I prefer traditional work, but incorporating digital processes into the mix have become essential to my workinh method. I will ink the piece out in black ink then take it to digital finish. (I use Dr. Martin's as well as Higgin's. Test 'em out, see how differently they behave and which you prefer). 

The Tablet piece, for instance, is two layers. The little squigs on top are drawn on a layer of tracing paper, while the Rabbi and the water is drawn on another page. I manipulate the ink through channels and all that jazz to change their colours and add shapes underneath to fill it out. This is done in tandem with much hair pulling and swearing, as I usually fumble hilariously through the colouring process.Draw from what you feel and go with it! Make sure you know the rules first, and know how things work before you bend them, but most importantly remember to have fun and love what you're making.
