New blog post up on Cheatingwithdinner.com Click the link in bio to sign up for our newsletter @cheatingwithdinner Brown Sugar Oatmeal Chip Cookies 1 cup packed dark brown sugar 1 cup coconut sugar 2 sticks of butter softened 1 teaspoon vanilla extract 2 eggs 1 cup fresh almond meal 2 cups all-purpose flour (if omitting almond meal only use 1 ½ cups AP flour) 1 teaspoon baking soda 3 cups of old-fashioned oats ½ cup white chocolate chips ½ cup butterscotch chips 1 – Preheat the oven to 350 degrees. 2 – In the bowl of a kitchen aid mixer or your hand mixer beat together on a medium speed the brown sugar and coconut sugar until they are creamy. 3 – Once butter and sugar have creamed, add the vanilla until completely combined in. Then add the eggs one at a time. Making sure to scrap down the bowl after each egg. Add the almond meal and beat until just combined into the egg mixture. 4 – In a separate bowl stir together the flour, salt and baking soda. 5 – Add the flour mixture to the mixing bowl in 3 batches with the mixer on low. Sometimes, using a paper plate as a funnel for the flour into the mixing bowl will help with the flour not flying all over your kitchen. Let each batch of flour completely combine before adding the next batch. 6 – Add the oats, white chocolate chips and butterscotch chips to the mixture and mix until just combined. 7 – Scoop your cookies onto baking sheets, spacing them a couple of inches apart. Bake until the cookies look dark and toasted. Personal preferences for chewy or crispy cookies will matter when baking. 20 minutes will give you a dark chewy cookie and 25-30 minutes will give you a crisp outside with soft middle. > Everyone’s oven is different and sometimes heats unevenly. After 10 minutes check on the cookies and rotate the trays – top to bottom and back to front. To make sure your cookies do not burn check the oven again at 20 minutes to make sure your oven is on the right track < 8 – Let your cookies cool before transferring them to a plate for eating......

Polpette Fritte 12 ounces of ground beef 6 ounces of ground pork 3 slices of White Bread Cubed 8 fluid ounces whole milk 2 cloves of garlic, lightly sautéed and set aside 1 whole egg beaten 1 yolk beaten 2 ounces of grated Parmesan cheese 2 ounce of Fontina cheese grated 1 ounce Italian parsley finely chopped 1 ounce lightly toasted pine nuts: In a small sauté pan over low heat swoosh around the pine nuts in the pan until you begin to smell the nuts. They are done when the nutty smell is in the air. For about 5 minutes they will begin to change a little in color.
