For me Brisket is the ultimate challenge. Every time you think you have the cook mastered it will throw you a new curveball. I started out cooking them to set temps. Wrapping at 165. Pulling them to rest at 205. Now I have a much greater understanding of when to wrap and when to pull. None of them are the same and if I’m honest it’s way more fun doing it by feel. And much more satisfying when you hit it out of the park
