What Makes a Good Sauce Good?
So what goes into making a good sauce? Sauces are as different in their uses as are methods for preparing them. What I've learned from making my own initially is to understand what the sauce will be used on along with what flavor profile you want in the end. To be clear, that flavor profile will be based on what you are preparing.
Making sauces from scratch makes it easier than "customizing" store-bought sauces for just the right fit. What drives our sauces is the desire they all be unique to fulfill a specific purpose. We accomplish this by using natural ingredients only. For example, in several sauces, we make use of real fruit, and they can be a challenge to store because the fruit will continue to ripen even in closed containers.
Using natural ingredients only allows you to configure a sauce with non-conflicting ingredients. Ingredients that do not conflict with each other or food items they will be used on. Doctoring premade sauces may get you to a palatable taste but not completely what a purist would expect. In my humble opinion, additives, preservatives, and flavor enhancers added to extend the shelf life of products get in the way.
It is these enhancers that can cancel natural flavors in food because they overpower the food. While additive makers will claim you can't taste their products, what we have found is guests who do not normally use sauce on BBQ use ours.
The only question we get, regularly, is what do you do with leftover sauces? Our standard answer is to refrigerate it. The shelf life for our products when refrigerated is 4-6 weeks for sauces that do not have real fruit. It is recommended that you freeze sauces made with real fruit unless they are used within one week. Leftovers can be refrigerated below 50 degrees for up to three weeks.
The last thing I will say about making sauces is you want to cook them over low heat to prevent burning ingredients. Burning throws off the taste so be careful.
