Tried this healthier cheesy pasta recipe last night: baked ziti chicken parm. https://recipes.sparkpeople.com/recipe-detail.asp?recipe=351984 It turned out decent, although not as cheesy normally as baked ziti is. I opted to mix in the marinara sauce with the pasta instead of having it layered on. Next time I would try to do the same thing with the layer of Parmesan cheese so it's more cheesy within, instead of having it sit as one layer below the chicken. Then probably add a little more sauce on top of the chicken. But still pretty good for a "healthier" night in. Bon appetit! xoxo eileen
Little Red Riding Hood
I just started back up my childhood (and teen-hood?) hobby of graphic design. I signed up for a free 30-day trial for Adobe Illustrator CC and tried my hand at a first graphic. I actually never did real graphic design when I was younger, maybe more of graphic altering, as I was doing stuff with oldschool Photoshop 6 so this was my first time using Illustrator. I found a cool tutorial, and figured I would learn by doing and just get into it. Here’s the end result! I did not do all the steps but am still pretty proud of what came out. THE HAIR WAS SO HARD.

I went to my very first metal concert at a bar last Saturday, in support of a friend of a friend's band who unfortunately didn't get to play cuz of technical difficulties. While this Asian girl wearing blue jeans, white top and brown leather jacket (me) was definitely out of place, it was still a very interesting experience. I'm not an avid listener of anything too heavy, but I definitely appreciate the music and the harmony bands work hard to put together. One of the bands we saw could play really fast but definitely did not have harmony as a group, so it was just really loud and a lot going on at once. I'm sure it's not easy, but props to anyone trying to make it out there. Keep jamming! By the way, this band is called Paragnosis and I saw them at Lucky Thirteen Bar in Brooklyn.

Los Angeles, California, USA (August 2015)
I’ve lived in New York all my life and I didn’t think I would be able to live anywhere else. Until I visited LA. Well, I still prefer NYC > LA, buuuuuut if I ever had to leave NYC, I would head to LA fer sure. Mainly because there is beach, weather is mostly awesome, food is so delicious, AYCE KBBQ is like $15, and I would try to attend all the show tapings. The traffic is meh but so is NYC’s. What was interesting is that I’m usually a typical Noo Yawker in sense of being very fast-paced, efficient, on-a-schedule, and everything is urgent and at first, the lax culture in LA really made me uncomfortable. I didn’t like the pace at all. But after a few days, I loved the chill, beachy vibes.. I could get used to this!
We spent a total of 5 days in LA. LA is huge and you WILL need to drive everywhere, unless you plan on spending a lot of money on Ubers. Parking is pretty cheap compared to NYC though. We could have crammed everything we wanted to do in maybe 3 days, but I’m glad we took the time to enjoy each point. PLUS, I had way too much food I wanted to try. I’ll do this post a little differently than my SF one, but will of course still give a run down of what we did. I split the trip into East LA and West LA.
Super long post, but here’s a quick run down:

Pacific Cost Highway Drive, California
When you don’t have to photoshop or put an Instagram filter on a picture, you know that the place is amazingly scenic. This was the PCH drive for me. I felt like I was living through a series of those Sample Pictures that comes with Window builds.
We rented a car in San Francisco and went south for Los Angeles (and kept the car throughout our LA trip and returned it at LAX). We split up the trip into 2 days (moreso, 1.5 days) and definitely could’ve sprung for extra stops along the route. We worried that it was going to be really cloudy (and it was for the beginning, but even with cloud, the experience was filled with incredible sights. I thought sitting in a car for 8 hours was going to be boring, but it’s not at all. From one amazing sight to the next, I was always in awe and excited. I’ll post which major stops I made, but my main takeaway would be - TAKE YOUR TIME. Do not rush through the drive. Stop often (in safe areas, of course) and take a moment to breathe it all in. Oh, and bring snacks and drinks for the ride.
Cauliflower Buns
DAMN I LOVE CARBS. But during the week, I try not to eat processed foods or complex carbohydrates. I limit my intake of simple carbohydrates (because you still need them but not too much), so any type of whole-grain bread, pasta, or brown rice is a no no for me during the week. This recipe for the cauliflower buns is something I recently discovered, and have been serving my taste buds verrrrrry well. Recipe after the jump!
Decided to make tonight: Matcha cake with strawberries and whipped frosting. Looks good but not sure if it tastes good yet! #IronChefChen

Chicken Cauliflower Fried Rice
Chicken fried cauliflower rice! New favorite veggie hack. (I hate vegetables and I’m trying to find any way to sneak them in deliciously… Sorry zucchini noodles- not completely on board!)
I know I usually post the recipe but I kind of made this one up before and during my cooking so I’m not exactly sure of my measurements. But what’s great about this is that it’s really up to you what you want your “fried rice” to have!

San Pacific Angeles Trip 2015
I just got back from my San Francisco / Pacific Coast Highway (US Route 1) / Los Angeles vacation yesterday. While a bit jetlagged and dreading to return to reality, I figured I’ll hold on a little bit longer to this vacation mentality by writing about my journey/itinerary while I was there. Plus, a few of my friends said they wanted to do the same thing so hopefully this helps them plan their trips. This segment will be in separate posts by location and I’ll link to all of them in this main post as I complete writing them.

A friend asked me for tips on Rome. I totally forgot I made this guide when I was planning to go. Figured I should share it here just incase I lose that guide and need some tips!
I went for several days (maybe 4) in June 2013 so forgive me for not remembering extensively. I thought Rome was really cool for its history, architecture, and culture. However, the food- it wasn’t the best. I heard from other friends the same thing; they said the food in other Italian cities were a lot better. Welp, just more of a reason to visit Italy again right?!

Chicken Parmesan (Pepperjack)
Hi! I know it’s been a long while since I posted last but here’s something I made tonight that deserved a post for me to remember what I did. This is not healthy by any means but totally delicious. Thanks Bobby Flay and my aunt for the pepperjack idea. This is the altered recipe for Chicken Parmesan (with Pepperjack Cheese instead):
Overall: 14/15
My chicky chicky parm parm (any Parks&Rec fans out there?!) was not as crispy as I’d normally get at restaurants but that’s probably due to the lack of oil I tried putting.. I’m sure if I actually used a lot more oil in the frying pan, it would be crispier. Still was faaaaantasic.
