Century Egg and Pork Congee
After several spicy and complicated dishes, letâs have something fresh and easy.
Today, I am writing century egg congee. Congee is a type of rice porridge or gruel popular in many Asian countries.  Century egg or pidan (Chinese: çŽč; pinyin: pĂdĂ n), is a Chinese cuisine ingredient made by preserving duck, chicken or quail eggs in a mixture of clay, ash, salt, quicklime, and rice hulls for several weeks to several months, depending on the method of processing. Century egg congee is a very popular Chinese food, especially for breakfast.
2 century eggs, cut into small cubes
1/2 Â tablespoon chicken powder
1/2 Â tablespoon cooking wine
1/2 Â tablespoon cornstarch
1. Dip rice into water for 2 hours. Add rice and about 750g water into pot and bring to a boil, then simmer for 30-40 minutes, stirring occasionally in the beginning and then more frequently near the last 10 minutes to prevent sticking. If the congee spills out, move the cover a little and leave a gap for hot steam to come out.
2. Â Marinade sliced pork with cooking wine and cornstarch.
3. After congee is ready, add marinaded sliced pork into the pot. Add salt and chicken powder. Keep simmer.
4. Add century eggs and simmer for 5 mins.
5. Close fire and put congee into a large bowl. Add scallion and pepper on the top.
You can enjoy the delicious congee with dim sum and cold dishes.
