These mini meatloafs were so easy but needed a touch more. To make this gluten free, I subbed the oatmeal with a gluten free hot cereal mix from Redmill I had on hand. It consists of corn and millet mixed. I also subbed the ground turkey for ground pork because I have tons of pork from the half pig I purchased. The taste was weak. To correct this, I made additional ketchup/Worcestershire sauce to dip the meat. That did the trick!
To make this gluten free, I used brown rice pasta. I also subbed collards for the escarole and omitted the cheese. This was filling and tasty yet not heavy.

This recipe was nothing short of amazing! Served with drop biscuits made from gluten free Bisquick, corn on the cob and homemade fries, there were no leftovers. My family loved it!
This recipe calls for Garam Masala which is a blended spice. As opposed to buying this from a specialty store, I made my own. Here is the recipe: http://allrecipes.com/recipe/easy-garam-masala/
To this, I also added some pureed yellow squash because I only had one tiny sweet potato. It was served over jasmine rice. Yummy!
For this recipe, I used a multitude of greens...radish, beet and mustard greens. I made my own real mashed potatoes. I used pork stock instead of chicken stock. I also used pork neck bones to make the pork stock and pulled the meat off afterwards which I used to top some salads.
Simple and comforting with a German twist, this one-dish meal delivers easy-to-like flavor in less than an hour. This was delicious! I subbed gluten free flour for regular flour and skim milk for whole milk.

My favorite winery, Keel & Curley in Plant City, FL opens up their fields to U-Pick at the end of the growing season. I was able to pick 4lbs. of blueberries. Check out these gorgeous fruits.

Whenever a recipe calls for ground meat, I think the type of meat is interchangeable. Instead of ground chicken, I used ground pork. I also cooked brown rice and added that in place of the instant rice. This made for a thicker soup almost of a stew consistency. It was delicious and very filling.
To make this recipe gluten free, just sub the regular pasta for gluten-free pasta.
