Roasted Ontario Cabbage Sandwich with Curried Chickpeas (V, GF)
Vitamin C-rich cabbage was prized in Ancient Rome, although we doubt even the Romans had a recipe as savoury and inventive as today’s plant-based meal. (With no offence intended to Cato and his contemporaries.) Thick roasted cabbage slices serve as the ‘bread’ portion of this sandwich, with curried chickpeas and fresh vegetables taking their rightful place as filling. Veni, vedi, vici, we encourage you to whisper upon assembly.
1 tbs avocado oil, or oil of choice
1 clove garlic, roughly chopped
½ Ginger Booster, or 1 inch ginger, roughly chopped
Salt and pepper, to taste
Spoonful of plant-based sour cream
Or whatever herbs, spread, and veg you have on hand
Preheat your oven to 400 F.
Wash your cabbage, and cut into thick circular slices. These will be your sandwich base and lid, so slice according to your preferred sandwich thickness.
On a baking sheet, drizzle avocado or olive oil over cabbage slices and season with salt and pepper.
Cook for 25 to 30 minutes, or until lightly crispy.
When you remove your cabbage from the oven, squeeze the juice of half a lemon over your slices.
While your cabbage is cooking, combine chickpeas, curry powder, ginger, garlic, and salt and pepper in a mixing bowl.
Heat coconut oil in a pan over medium heat. Add your seasoned chickpea mixture.
Sauté for 5 to 10 minutes, or until crispy.
Assemble your cabbage sandwich with your toppings of choice and enjoy.
Here we must confess: Your sloppy sandwich will require a knife and fork. Consuming the overflowing vegetable stack is apparently “ill-mannered” and “boorish.” No matter, you will enjoy it even more with cutlery!
