Boterkoek- a Dutch classic (and a family classic)
My family loves making boterkoek for every occasion. It’s truly a classic around my parts. Here’s the recipe that we use when we make it!
-4 sticks of butter
-2 eggs
-2 cups flour
-1 cup sugar
-1 tsp vanilla extract
-a can of almond paste or raspberry filling (your choice!)
preheat oven to 350 degrees
grease a 9x9 baking pan
using a stand mixer or handheld mixer, cream together the butter and sugar.
add in the egg and vanilla extract and mix until combined.
slowly mix in the flour with hands, until a dough-like substance forms (If sticky, just add a little more flour until it’s not).
put half of the dough in the bottom of your baking pan and spread flat and evenly.
spread on the almond paste (or raspberry filling) evenly.
spread out the other half of the dough on top of the filling evenly.
create an egg wash with egg whites and water, and brush it over the top of the dough.
bake for 45 minutes or until toothpick comes out clean.
let cool, cut into squares, and enjoy!
