Boterkoek- a Dutch classic (and a family classic)
My family loves making boterkoek for every occasion. It’s truly a classic around my parts. Here’s the recipe that we use when we make it!
-4 sticks of butter
-2 eggs
-2 cups flour
-1 cup sugar
-1 tsp vanilla extract
-a can of almond paste or raspberry filling (your choice!)
preheat oven to 350 degrees
grease a 9x9 baking pan
using a stand mixer or handheld mixer, cream together the butter and sugar.
add in the egg and vanilla extract and mix until combined.
slowly mix in the flour with hands, until a dough-like substance forms (If sticky, just add a little more flour until it’s not).
put half of the dough in the bottom of your baking pan and spread flat and evenly.
spread on the almond paste (or raspberry filling) evenly.
spread out the other half of the dough on top of the filling evenly.
create an egg wash with egg whites and water, and brush it over the top of the dough.
bake for 45 minutes or until toothpick comes out clean.
let cool, cut into squares, and enjoy!

Ingredients: 2 slices of white bread. 2 eggs. 2 tablespoons of milk. 2 tablespoons of sugar. 1/2 teaspoon of cinnamon. 1/4 teaspoon of vanilla extract. 1/4 cup of cream cheese. 1/4 cup of strawberry jam. 1/4 cup of fresh strawberries, sliced. 1/4 cup of powdered sugar for dusting. Whipped cream optional. Maple syrup optional.
Instructions: Put eggs, milk, sugar, cinnamon, and vanilla extract in a bowl and mix them with a whisk. Remove the crusts from the bread slices and use a rolling pin to make them flat. Cover each rolled-out piece of bread with strawberry jam and cream cheese. On top of the jam, put some fresh strawberry slices. Like a burrito, roll up each piece of bread tight. Put the nonstick skillet on medium heat and add the butter. Cover all sides of each bread roll-up with the egg mixture. Start cooking the roll-ups in the pan. Each side should take about two to three minutes to turn golden brown. Take the roll-ups out of the pan and let them cool down a bit. Cut the roll-ups into small pieces that you can easily eat. Put the French toast roll-up pieces, the rest of the fresh strawberries, and a sprinkle of powdered sugar in a blender. Mix until it's creamy and smooth. Put the smoothie into a glass. If you want, you can add whipped cream and maple syrup on top. Have fun with your tasty French Toast Roll-Up Smoothie!

Instructions: Preheat the oven to 350F 175C. Prepare a muffin pan with paper liners. In a medium mixing bowl, combine the flour, baking powder, baking soda and salt. In a large mixing bowl, combine sugar and vegetable oil. Beat in the egg and vanilla extract until smooth. Alternate between adding the flour mixture and the buttermilk until the batter is smooth. Fold in the blueberries and walnuts. Fill each muffin cup approximately 3/4 full with batter. Bake the cupcakes for 20-25 minutes, or until a toothpick inserted into the centre comes out clean. Cool for 5 minutes in the muffin tin before transferring to a wire rack to cool completely.

Ingredients: 1 cup butter, softened. 1 cup granulated sugar. 1 egg. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1/2 cup cocoa powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup creamy peanut butter. 1/2 cup powdered sugar. 1 teaspoon milk. 1 teaspoon vanilla extract.
Instructions: Make the butter and sugar fluffy by beating them together in a large bowl. Add the egg and 1 teaspoon of vanilla extract and mix them in well. Mix the cocoa powder, baking soda, salt, and flour together in a different bowl using a whisk. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Make two halves of the dough. Cover each halves with plastic wrap and put them in the fridge for at least an hour. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. On a floured surface, roll out each piece of dough to about 1/4-inch thickness. Cut out an even number of cookie shapes with cookie cutters. Once the baking sheet is ready, put the cookies on it. Bake for 10 to 12 minutes, or until the edges are set. Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. Put the powdered sugar, milk, and 1 teaspoon of vanilla extract in a bowl and mix them together until the mixture is smooth. Put a lot of the peanut butter filling on the bottom of half of the cookies that have been cooled. To make sandwiches, put one filled cookie on top of each other cookie. Slide the cookies together slowly to spread the filling to the edges. Before you serve the sandwich cookies, give them about 30 minutes to set.

Ingredients: 12 oz cooked spaghetti. 1 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. 2 cups marinara sauce. 1 lb ground beef. 1/4 cup breadcrumbs. 1/4 cup grated onion. 1/4 cup chopped parsley. 1 egg, beaten. 1 tsp garlic powder. Salt and pepper to taste.
Instructions: Warm the oven up to 190C 375F. Put mozzarella and Parmesan cheese in a bowl and mix them together. Put the spaghetti mix in a greased pie dish and press it into the bottom and up the sides to make a crust. Put the ground beef, breadcrumbs, onion, parsley, egg, garlic powder, salt, and pepper in a different bowl. Combine well. Make meatballs out of the mixture and spread them out on top of the spaghetti crust. Mix the meatballs and spaghetti together, then add the marinara sauce. Put the pan in a hot oven and bake for 25 to 30 minutes, or until the meatballs are fully cooked and the spaghetti is golden and crispy around the edges. After a few minutes, let it cool down before cutting it. If you want, you can serve it hot and top it with more Parmesan cheese and parsley.

Instructions: Press parchment paper into an 8 x 8 inch 20 x 20 cm square baking pan, allowing a small overhang for simple removal. Put the butter, sweetened condensed milk, and chocolate chips in a bowl that is safe to microwave. Microwave, stirring, in 30-second increments until mixture is smooth and completely melted. Add the vanilla extract, chopped almonds, and sea salt. Transfer the mixture into the baking pan that has been preheated and level it out. For more flavor, top with a little more sea salt. The fudge needs to set, so put it in the fridge for at least two hours. When the fudge is set, remove it from the pan by using the overhanging parchment paper. Once sliced into tiny squares, serve.
