Pitch videos, like prototypes, are best used when you know who will be looking at it. Depending on the goals of the person watching or using what you make the video or prototype should be built accordingly. If you need to know about interactivity, showing a "finger" on the interactive prototype that you've animated will lead users too much. Alternatively if a stakeholder is allowed to tap and click and push an interactive prototype to its limits, they may be displeased with what they are percieving the experience to be. Videos and motion prototypes always tell a story. Interactive prototypes are for testing. Even within these we can breakdown who should see them and how hi the fidelity should be.
You heard from Paul Schlacter talk about videos that demonstrate a UI and ideal UX model, and how to make those videos depending on how much time you have and what level your design is at. If you have a lot of UI done and you are making the video for someone who needs to see the product (rather than just the idea) then this video from a former student is a good example of that http://marinad4t.tumblr.com/post/69886996393 The person this video is made for is likely an internal team member making a decision on if, or how to build this product.
