Tonight's Menu

This evening I created Cassoulet, a traditional French dish. Cassoulet is a slow cooked bean casserole, traditionally crafted with meats such as duck, confit and toulouse sausage. Tonight, however, I decided to substitute for pork sausages I had hand-made. This dish is one with complex flavours that requires slow cooking to achieve optimal taste and texture.

The dish benefits from simmering in its own juices over a period of time to enable it to come to fruition.
