Tonight for dinner we have vodka cream (with a little bit of alfredo cream) pasta with farfalle noodles, Italian sausages, chicken sausages, mushrooms, and onions. Typically my mom cooks dinner for the entire family. She makes a main dish, usually a big korean stew type of dish and a bunch of other little sides that we add to the table. However since she was tired my sister and I made dinner for the entire family. When my family and I eat dinner, we never cook our own separate meals (takes too much time) nor do we buy them (because they waste more money). We like to have one meal shared all together and sit at one table together and enjoy it, together. My opinion, the fastest way for getting dinner on the table? Cook together and help each other set up the table. Don't just leave the job for the mom to do all the cooking.

My boyfriend had been nagging me for days about the lack of red meat in the house, did the thought of buying some occur to him? No, it's as if I am the gatekeeper of the pantry and the sole provider of food. Since I live in New England I'm not about to grill a steak for him in below-freezing weather, so he instead had to settle for a frozen Szechuan beef and broccoli pre-fab meal from Trader Joes, and Thai vegetable gyozas. I added some fresh broccoli and bok choy to the frozen meal so it tasted a little bit fresher and had some homemade aspect to it, and then I set about making the gyozas. Gyozas are treacherous to make. You have to put the gyozas, covered with frost, in a skillet of sizzling oil. The minute they meet the oil, it sprays everywhere. If you survive that unscathed, don't celebrate yet, because you still have to dump in a couple spoonfuls of water into the hot oil, and then wrangle the lid on the skillet. It's a dangerous endeavor, and you probably will end up using kitchen items as shields from the hot oil. But then you end up with these little sachets of herbs, vegetables, and spices, and suddenly the oil burns on your arms are worth every minute of it. Out of sorrow comes great joy, and a full belly. I've been keeping track of my dinners over at http://ignite-360.com/blog/ for the past couple of weeks as part of looking at the eating habits of a millennial over the span of 30 days.

This is my dinner last night, flank steak tacos with cabbage, avocados and salsa. I'll have the leftovers for lunch today. I love to cook, I cook dinner pretty much every night except Friday, when we have wine, cheese, bread and fruit (I do make the bread). It's just me and my husband, no kids.

Typical fast family meal: one vegetarian meal for Mom, one meat meal for Dad and pbj for the kids. Tonight, the kids washed the veggies and diced them with help. The kids had the veggies and leftover meatballs and fried chicken w/fries. These leftovers were the healthiest option on the kids menu at the restaurant we went to last night. Hubby ate his leftover chicken scallopine and I had salad with tuna packed in oil. Maybe one day they'll follow my example.

This is dinner for my boyfriend and me. He usually does the cooking while I relax and then I do the cleaning up while he relaxes after dinner. This is baba ghanoush, a spicy cilantro chutney, and cheese/bread and veggies for dipping. Usually with finger foods we eat off a communal plate. Sometimes he'll make several of these dips/sauces/spreads on Saturday or Sunday and we use them to make vegetarian sandwhiches and other meals throughout the week.

Dinner for my babies (Miles 5, Micah, 3) "Hasselback" Sweet Potatoes with a cinnamon-spiced agave drizzle, served with haricot vert (french green beans), and curried chicken (thighs) and cornbread :) The kids loved it! Tip for getting dinner on the table quickly? Thaw your protein out that morning and build a meal around it!

Sunday is a big dinner night in our house - tonight I made Turkey Meatloaf Muffins, Roasted Garlic Yukons & Green Salad - for my vegan daughter (15), I made Maple Glazed Tempeh instead of the meatloaf! I find it helpful to make a menu for a week at a time - I also shop for a week at a time. This way, I know exactly what I'm making each morning & prep can be done ahead of time if necessary. My 3 girls (15, 13 & 10), help plan the menu AND cook the meals, so they are involved in the whole process. Everyone's happy with this method!

My family of four (my husband, me, and two sons ages 2 & 4) had semi-homemade pizza tonight with romaine & roma salad and blueberries. The crust for the pizza is store bought, but I added the toppings fresh - homemade tomato sauce, fresh mozzarella, ground beef, mushrooms, red onion. Surprisingly, our kids have always like crispy, leafy lettuce and fresh tomatoes so they gulp those down. For a treat, they got chocolate milk, tonight! :)

This is Sunday evening supper in the Nygaard/Sims household. I am a high school English teacher, and I live with my parents and younger sister & brother. My Mom, Dad, and I all share cooking responsibilities. Usually, we eat vegetarian. Mom made this dinner with a little bit of help from me - Southwest bean/veggie pie, fresh strawberries, red peppers, and green salad. Throughout my childhood, we ate together every night. Now, my Mom's work schedule and my sister's college schedule sometimes preclude the entire family eating together every single day, but we still manage to eat together a couple times a week.

My roommate and I cook dinner together most nights--we're both over-involved seniors in college, so sometimes it's late. This week we made chicken nuggets, sweet potato fries, and sauteed kale. And we had some craft beer, of course...you can't have chicken nuggets without craft beer.

I'm an engineering major and I'm really busy with homework so I eat at the dining hall on campus for most meals. However, I like cooking for myself and experimenting with food on the weekends. I made this huge tomato and egg dish back in the fall when the farmers market down the street was still pumping out some delicious tomatoes. Ingredients: 4-5 small/medium heirloom tomatoes (from the farmers market), a few slivers of red onion (from dining hall salad bar), a black bean/corn/cheese/spinach mix left over from my roommate, two eggs, and some spicy spices. I think college students have to be the most innovative because a lot of us don't have cars, time, or much money to spend on fresh food.

My boyfriend and I prepare meals like all the time. These are sweet potato latkes from a recipe in Cooking Light. These were super easy to make, required both of us to prepare, and were unique to eat. Unfortunately, we don't have a table, so we set our shared plate on the coffee table and probably watched TV and enjoyed a hoppy beer along with the meal. But we went to the gym before dinner, so it all balances out!

We have 2 kids, 6 and 9. They're both picky eaters, but come by it honestly--i was the same. I grew out of it eventually, and see signs that they will, too. This is red beans and rice, with sausage from a local Oklahoma farm. Greens from my garden, and sweet potato biscuits made with tubers i grew last summer. Kids won't eat the greens, but usually finish the meal with a piece of fruit. This is the kind of meal we have on the nights my son has an evening activity. The beans can cook in the slow cooker (and there are usually a meal or two's worth already cooked in the freezer), the biscuits i usually make in multiple batches and freeze ready to bake as needed. Other nights i may spend more time cooking, but i try to make enough for more than one meal, or at least end up with leftovers that can be the starting place for another meal. I've always been serious about cooking and eating family dinners, but four years ago my frustration with what the kids wouldn't eat made me start trying to systematically expose them to a greater variety of vegetables, and--to keep me honest--posting about it on Facebook. I've always had a garden, but it's never been big enough, so 2 years ago we bought a house on 5 acres 5 miles out of town, with the intention of raising much of our own food. So far, we supply all our eggs and chicken, and most of our vegetables (especially in the summer), and sell surplus eggs and vegetables to friends and family. The five-year plan is to add goats. Raising our food and preparing it is my full-time job, so i spend a lot more time in the kitchen than any reasonable person would.
