Roasted Brussel Sprouts with Bacon
Easy brussel sprout recipe.
Ingredients:
15 brussel sprouts
Olive Oil
Seasoned salt (I use this one)
Pinch of ground black pepper
Pinch of crushed red pepper flakes
Pinch of cayenne pepper
Bacon (optional)
Glass rectangular baking dish
Directions:
Preheat oven to 350 degrees.
Oil the baking dish. Cut and clean the brussel sprouts and place in baking dish.
Season brussel sprouts with garlic powder, seasoned salt, crushed red pepper flakes, and cayenne pepper. Drizzle another layer of olive oil over the brussel sprouts.
Roast the brussel sprouts for 20 minutes (after 10 minutes, rotate the baking dish and shake the brussel sprouts around). Turn off the oven, and let the brussel sprouts sit for an additional 5 minutes.
Let it cool for 10 minutes.
Chocolate Ganache Yellow Cupcakes
Used Gale Gand's yellow cupcake recipe and Ina Garten's chocolate ganache.
Total Prep/Bake Time: 1 hour Yield: 12 cupcakes
Yellow Cupcake:
Ingredients: (1/2 the original recipe)
1/2 cup butter (1 stick) (room temperature)
1 cup of white sugar
2 eggs (medium-large) leave at room temperature for 30 minutes
1/2 cup milk
1 teaspoon Vanilla extract
1 1/2 cups cake flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
Cupcake Liners
Directions:
Preheat oven to 325-350 degrees. Sift cake flour, baking powder, salt together.
Cream the butter and sugar together until light and fluffy (2-3 minutes).
Stir in the egg yolks one at a time, then stir in the vanilla.
Stir in the flour mixture alternately with the milk, mixing just until incorporated. Start and finish off with flour. Make sure not to over mix, this will cause the cake to dry out.
Scoop about 1/4 cup batter into the cupcake liners.
Bake for 15-20 minutes and let it cool.
Before dipping the cupcakes in the chocolate ganache, let the cupcakes cool for 20 minutes.
Chocolate Ganache:
Ingredients: (1/2 the original recipe. Perfect for 12 cupcakes)
1/4 cup heavy cream
1/2 cup semisweet chocolate chips
Directions:
Heat and mix the heavy cream and chocolate chips together. Stir until blended. I don't use a double boiler, just heat the cream and chocolate chips in the microwave for 30 seconds and stir until blended.
Dip the cupcake into the ganache.

Turkey Chili
Easy Chili Recipe.
Prep Time: 20 minutes Cook Time: 1 hour and 10 minutes Ready in 1 hour and 30 minutes
Yield: 6-8 bowls
Ingredients:
1 pound ground turkey
2 green peppers
1 medium onion
1 can stewed tomatoes (14.5 oz.)
1 can red kidney beans (19 oz.)
3 teaspoon chili powder
1 can whole kernel corn (15.25 oz.) (optional)
Crushed red pepper flakes (optional)
Directions:
Dice onions and green peppers.
Heat a stock pot over high heat and add ground turkey.
Once the ground turkey is cooked through (not pink), add the green peppers, onions, and three teaspoons of chili powder. Stir well.
Add cans of corn, kidney beans (leave undrained), and stewed tomatoes. Mix all together.
Bring the chili to a boil and then reduce the heat to a low simmer. Don't worry if the chili looks on the dry side, it's supposed to look like this. Do not add more stewed tomatoes or liquid, this will make it too soupy.
Simmer the chili for an hour and stir every 15 minutes.
Serve and eat! Add red pepper flakes if you want it spicier.
