Peanut Butter Cookie + Banana Ice Cream Sandwiches -Ā These are decadent, delicious, easy to make and best of all - healthy!ā¦RECIPE
INGREDIENTS
Cookies:
1 ½ cups rolled oats or walnuts
2 heaping tablespoons peanut butter
1 ½ cups dates
Ice cream:
3 frozen bananas
How to make the transition to veganism!
I had wanted to make the transition to veganism for so long but I never knew where to start. I began as a vegetarian for 4 years and then made the switch to veganism! I have compiled a list of things to help YOU make the transition (: Even if you have never considered this I definitely think you should try it out for a few days or a week and just see what you think!Ā
I, like many others, used to think that going vegan would limit me so much to what I could and couldnāt eat! I was wrong- veganism has expanded my food range so much and I have begun to try things that I had never even heard of before! Making this transition has allowed me to try so many new recipes and ways of cooking things! I have some wonderful recipes I cook frequently now and am working on posting them all on my blog (:
Some useful resources that helped me:
The book Vegan for LifeĀ was a HUGE help! It helped me to learn so much more about nutrients and how to make sure I am eating healthy, eating enough, all the while eating vegan ! This is a must read if you are making the transition!
Vegankit helped me when I started too! It helped me to learn about how to live a vegan lifestyle- including foods, products, clothes, and more!
Earthlings- I never finished it but it is a documentary about animal cruelty and it is just absolutely heartbreaking! I have been told by many that it makes people want to go vegan!
From excuse-itarian to vegan! This video discusses a lot of common/important topics that are relevant when making the transition! You should defintiely watch it!Ā
Pinterest ! I found it my favorite source for finding recipes! They are free and easy and there are a million to choose from! If you check out my pinterest (linked above) I have a bunch of recipes under my vegan board that I have made & loved!
Vitamin B12-Ā of all supplements this is the one you need! So make sure you are taking it :DĀ
Some other things to keep in mind when making the transition:
Choose around 10 easy & basic recipes that you can fall back on! Many families stick to the same recipes throughout throughout their weeks and rotate them and if you have 10 to rotate through then you will be set!
Let people know you are vegan before you visit or come prepared! Many people are willing to work with you and help you to meet your dietary needs but you should let them know in advance so they will be prepared!
Prepare in advance. Whether you are traveling or just going out to eat it helps to pack snacks along or see where you are going and check if they have vegan options!
When you go out to eat the best thing to do is ask the waiter what options are available or ask for the specifics of a certain item on the menu!
Keep food ready in your pantry/fridge! If you have food ready to eat then when you are hungry you wonāt be tempted to eat anything that is not vegan!
Remember your reasons for doing this! Whether you are motivated for your health or to help the animals, keep it in mind so you do not give up!
Make a vegan friend! There are many vegans on tumblr and sometimes it just helps to be able to talk to someone that you have veganism in common with! You can share ideas, tips, recipes, etc!
Know your stuff! Donāt be pushy when talking to others about veganism but be able to stand your ground! Never be a rude vegan (because they already have a bad rep) but donāt let non-vegans push you around and insult your beliefs either !Ā

Okay so I have been meaning to do this forever! But here are some of my most favorite recipes - all of which are vegan & healthy & amazing!! Please give them all a try! They are so wonderful - even my dad - who hates anything healthy- enjoys these recipes!!

Is eating healthy really that expensive?Ā I know some people think that eating healthy is going to break the bank but I promise it doesnāt have to! Yes- if you are buying a bunch of specialty foods, shopping at expensive health foods stores, and being picky about what brands you get then sometimes it can add up! But I am able to afford a healthy diet on a college budget (and let me tell you that is not much!)
My typical grocery list:
Weekly:Ā
Canned Beans (chickpeas, kidney beans, & black beans) - bagged beans are cheap too!
Spinach & Kale
Bananas (like 3 bunches haha)
Apples
Grapes
Zucchini
Other fruits & veggies
Hummus
Monthly: (these are a little bit more pricey but they last me the whole month or longer and are totally worth it!)
Brown Rice
OatmealĀ
Quinoa
Frozen Fruit
Lemon Juice
Peanut Butter (natural)
Nuts
Craisins
Bread (I keep it in the freezer and take some out each week)
I spend around $20-25 every week and then probably an additional $30 when I buy the monthly foods.Ā
I buy store brands and in bulk whenever possible because it is cheaper!
I also buy organic beans which are only 90 cents - but you can find normal beans even cheaper! If you go with bagged beans and cook them yourself it will be even cheaper than the cans! I always look for sales as well.
Buying fruits & veggies frozen is typically cheaper!
Shop at a farmers market for fruits and veggies - you can usually find good deals!
My typical meals:
Breakfast - oatmeal with craisins and a banana
Lunch & dinner - A bean dish with rice or quinoa, a smoothie, or a sandwich with a salad.
Snacks- veggies with hummus, salads, fruits (frozen fruit is amazing!), trail mix, and apples with PB!
Not all healthy foods are cheap but you definitely can find a way to eat healthy on a budget!Ā

So many people tell me they would love to go vegan but they do not know where to begin! I am here to help with that! Here are some tips to help you learn about veganism and to help you know where to start:
First off, it is important to remember that veganism is a lifestyle. You are living a cruelty-free, compassionate life. This isnāt a diet or a trend. You need to decide your reasons for doing this ā health, environmental, animals (or all)- and use them as your motivation. It is important to learn about all of the aspects and be informed on each so that you can form opinions on different topics and really educate yourself on veganism!
Letās get down to the basics:
Vegans do not consume or use any animal products/by-products: meat, fish, dairy, eggs, leather, products tested on animals, etc.
You obviously do not eat animals of any sorts (no meat & fish). It is cruel, inhumane, and just terrible overall ā for the animals, the environment, and your health. Documentary for each (respectively), Earthlings, Cowspiracy, and Forks Over Knives (also on netflix).
You do not consume any by-products from animals (no dairy, eggs,honey). Each one of those is linked explaining the truth & cruelty behind them. Do you have the image of your milk being produced by a cute little cow being milked by a farmer? That is not how it works. Please learn the truth & check out those links.
You donāt use products made from animals (pretty obvious right??). NoĀ silk, no leather, no wool. I have linked each of these as well to posts that explain the truth behind them. Ā

Cruelty free products & cooking, recipes using ingredients you have never even heard of before, and a new, compassionate lifestyle! Your world will open up in so many ways, and I am so excited for everyone who is willing to try it!
Some people think of veganism and think it is crazy! I understand- I used to be one of those people. But now that I understand the lifestyle and the beliefs behind it I would never go back to my former self! I love being vegan! Some common misconceptions:
PROTEIN?! Where will I get my protein???!! No, meat is not the only source of protein. Protein can be found in many plant-based sources. Whole grains, legumes (beans, soy products, nut, nut butters, peas, lentils), seeds, and vegetables all contribute a significant amount of protein to your diet! It is not hard to get the amount of protein you need per day, in fact, most people get more than they need. The average person needs 55 g of protein per day (give or take), while most people consume 70+g (which is obviously not good for you either). Needs will vary depending on you activity level and other variables though. Beans and rice combined are a great meal that provide all of the essential amino acids and make a complete protein Ā
I CANāT LIVE WITHOUT CHEESE- Yes, you can, but you actually donāt have to. Daiya is an amazing brand that produces vegan cheeses of all varieties! You can use it in bean recipes, casseroles, pizzas, wraps, sandwiches, salads, etc. The options are limitless! Most grocery stores carry this brand now too so it shouldnāt be too hard to find! You can also find restaurants with vegan cheese options or opt for no cheese on your orders! There are other brands as well!
What about ice cream?? Have you heard of Almond Dream, So Delicious, and Trader Joes? They, among many other companies, produce THE BEST ICE CREAM (seriously if you have not tried Trader Joes soy cherry chocolate chip ice cream you have not lived yet) you will ever have! You need not worry about ice cream, chocolate, or any other amazing dessert you think you might miss out on- there are plenty of vegan alternatives (many ā especially ice cream) are available at regular grocery stores!
Wonāt I get sick? Or be deficient in vitamins? No! You will need toĀ supplement B12, but other than that you can get all of the vitamins and minerals you need from plant foods! The books Vegan for Life and Vegan for Her are great! I highly recommend them if you are looking to stay healthy following the vegan lifestyle! They go in depth about vitamins/minerals and everything that you may be concerned about!
What do you eat?! All kinds of natural foods. Vegetables, fruits, legumes, vegan specialty items, and so much more! There is literally a vegan recipe for any dish you can think of! If you would like a vegan recipe for your favorite meal just message me xx
As you can see there are alternatives for everything- butter, meat dishes, ice cream, yogurt, milk, cookie dough, chocolate, etc. You will NOT be missing out!
And remember- vegan does not equal healthy! Just because something says it is vegan does not mean it is good for you. Plant-based foods are the best for you! All the alternatives listed above may not be the healthiest but they are good for the soul- moderation is key š
