Cape Scott Trail

On April 27th I finished school and had some time off before starting work so Neil and I decided to  spend this past week on Vancouver Island and more importantly to go backpacking on the Cape Scott Trail. If anyone wants a more detailed trail report or wants to know more about the trail in hopes of hiking it let me know. I have more pictures, insights and maps.

Lemon Square

Found the ultimate lemon squares recipe below:

For crust:

.25 cup melted and cooled coconut oil

.25 cup palm sugar or 2-3 tbsp maple syrup

1 egg, at room temp

.25 tbs almond extract

1 cup packed fine almond flour

3 Tbsp coconut flour

.25 tbs salt

For filling

Zest from 1 lemon

.5 cup freshly squeezed lemon juice

.5 cup honey

4 eggs

1 egg yolk

1 Tbsp coconut flour
