This freshly caught trout, who's cousin filled my fish tacos last week, was part of a little bit of research and development; Freshly filleted, marinated in white wine, garlic, and Italian herbs. Then, baked in a pan with red pepper, tomato, and lemon, served over white wine, lemon, roasted veggie, scampi. From tide to table, truly a pleasure.
