I have had many tasty dishes by Todd English ( @cheftoddenglish ), so when I got the chance to check out Tuscany at Mohegan Sun ( @mohegansun ), I had to check out the fries. I usually avoid special orders, but in this case, they offer duck fat potatoes which are fingerling potatoes, so I asked to swap those out for the hand cut skin on fries. Though I don’t think the fries are genuinely skin on, they were plenty flavorful. After being fried up to the perfect crispiness then they are blanch in the duck fat which it seals in a rich flavor.
