Beetroot and carrot soup Just cook 1 onion, 2 carrots and 3 celery stalks (all chopped) in some olive oil, add 4 chopped beetroots, 500g chopped potatoes, 1 bouquet garni, 4 cups vegetable stock and 1 cup cold water and bring to the boil. Simmer, partially covered for 1 hour until the beetroot is tender👌🏽served mine with roasted chickpeas, chives, and coconut cream and this cost me less than $1 per serving yay

Luxury foods such as fake cheeses, vegan chocolate, soy meats, vegan spreads etc. are usually more expensive than their animal product counterparts, but these foods are not necessities. Providing you live in an area with access to fresh food (i.e, not a ‘food desert’), it’s entirely possible to eat vegan on a tight budget whilst still enjoying healthy and diverse food!
