Here's a guy any starters don't wanna mess with until a higher level, when you can have good spells and a higher archery skill. Once you feel comfortable, you can find one and take one on. I suggest you summon a some sort of follower or bring a companion. Use them as a distraction and make your way away from them. Then, use your bow or spell until your companion dies. If the giant hasn't died, run like hell. If you have the Dawnguard pack, you can also just make them your personal slave until they desintigrate.
