1-2 potatoes, chopped roughly
1 15 oz can of black beans
Greens (chard, kale, collards, etc.)
4 cloves of garlic, minced
Tomatoes (2 fresh or 1 15 oz can)
1.5 cans water (or 1/2 can if using canned tomatoes)
Boil some water and toss in potatoes for roughly 4 minutes.
Drain the potatoes and set aside.
Heat about 2 Tbsp of olive oil in pot and saute onions over medium-high heat until clear.
Add minced garlic cloves and cook until you can smell the garlic.
Add the rest of the ingredients (beans, tomatoes, 1.5 cans of water (or 1/2 can if using canned tomatoes), greens, potatoes, and spices).
Bring the mixture to a boil and then simmer over low heat.
Check occasionally until it looks and tastes ready - about 20 min.
Pour in a blender and puree.
Enjoy with grated cheese or sour cream (I like it with Trader Joe’s raw milk cheddar or queso fresco)
