She’s able to communicate to you her consent, so that is consent. If she was not able to give consent, then that would be a problem.
With her being a deaf/mute, that doesn’t mean she cannot give you informed consent. You says you use ASL to speak back and forth, so your are able to communicate and thus are able to receive consent.
The thing you read was talking about impairments and not disabilities. Impairments like drugs, alcohol, and several other things where the person in questions is not able to give informed consent.
People with disabilities are still able to give consent in most cases and it sounds like your girlfriend is perfectly able to do so.
