Coming soon to Walker’s Point: A craft spirit distillery.
Central Standard Craft Distillery has been two years in the making, and it all started over the very product they set out to make.
“We were up one night tasting some craft bourbon, and we really started talking about it,” co-founder Evan Hughes explained. “The next few days, we realized that we weren’t just having a drunk, late-night conversation. We really wanted to do this.”
From there, Evan Hughes, Pat McQuillan, and Brandt Foster started out to start their own craft distillery. They teamed up with distiller Brian “Blaze” Blazel and began putting together their dream.
From the beginning, they wanted to stick to the Midwest mentality of working hard in paying attention to details as well as staying as local as possible. Everything from the location to the grain to the repurposed barn wood on the walls.
The barn wood itself comes from an Amish-built barn in northern Wisconsin built in 1908. They even have an old photo of the barn hanging behind the bar.
They landed right next to Milwaukee Brewing Co’s warehouse because of the area’s thriving foodie and bar culture.
“This area has a lot of craft restaurants and bars, and to be honest, we really think what we are doing and our process is perfectly married to the Walker’s Point neighborhood,” Pat McQuillian said.
Central Standard Craft Distillery is going to distill the usual spirits with their own twist: a rye-based vodka, a white (also known as “clean”) oak-based whiskey, a wheat-based vapor-infused gin, and a rye bourbon.
The space will serve as a distillery during the day and a 1,600-square-foot tasting room at night with a bar serving their craft spirits.
While the first batch wasn’t quite ready for tasting, it seems like the attention to quality will pay off. Their idea is that everyone from the factory to the office can, and should be able to, enjoy craft spirits, again harking back to their roots both locally and in the Walker’s Point neighborhood.
They are on schedule to open this summer, and because the community has been so accepting, a portion of their profits will be going right back into the community through local organizations.
