The gluten free life gets better every year. Found these matzo style crackers which I'm pairing with pesto cheese and blackberries for lunch. Yup yup.
Today's experiment: taro root filling for sweet rolls.
The result: taro root filled rolls. For my slightly sweet sweet tooth today, this did the trick. (All purpose gluten free dough, taro root filling which is steamed taro root + sugar + coconut oil)
Tonight's dinner involves an experiment with cooking basque chorizo in sidra (a dry cider), as recommended from the sir at the Spanish kitchen shop. Mmmm mmmm.
Since going grain free, oats have not been in my kitchen. But since I've transitioned to including grains occasionally, I bought some yesterday. I tried the overly Pinterest represented mason jar method of overnight oats last night out of curiosity. Verdict: tasty, but still feel like it's overhyped. Don't hate me.
Rice triangle win (one kimchi, and one albacore tuna please). Lots o Sriracha. #glutenfree
Mussels over sautéed kale over baguette = dinner. Originally we were going to make this on the beach over our camping stove, but it's freezing out there. Windy and freezing.
Bacon cauli-rice. Got a wok today (@jmanwag inspired me) and after seasoning it, seasoned again with the bacon and incorporated into this dish. Ingredients: cauliflower, peas, leeks, shallots, ginger, garlic salt, bacon.
What should I make in my salt bowl? Any favorite dishes out there using one?
Don't forget to make tepache with your pineapple skin waste! First time for me. My apartment is too cold for proper fermentation, so you be had to stick it in the oven with the light on 😂.
Got a new cookbook for Christmas (my family knows me well!), and it's a good one. Not to mention beautiful. I made the fried spring rolls (rice based wrappers), and they're probably the best spring rolls I've ever had. I fried them in a light layer of coconut oil. Stuffed with cabbage, browned pork, shiitake mushrooms, rice.
Thank you @joseybakerbread and @themillsf for finally making a GF bread worth eating! I can finally eat eggs and toast again. (And to @matherton87 for exposing me to it with a Christmas gift! Food gifts are the best!) #glutenfree
I love this meal. So much. (lemongrass & ginger meatballs over veggies) Ingredients: {meatballs} ground beef, fish sauce, GF soy sauce, lemongrass, ginger, S&P, garlic, white rice. {greens} shallots & garlic sautéed in butter, S&P, peas, spinach.
How my 2nd breakfast is going down: HB egg, some goat cheese gouda, ham (nitrate free), and some bread from Bio (San Francisco) I'm trying out. It's good...by the way. Nutty, spicy, and just the right size.
