Low carb, high fat no bake cheescake attempt 1.
Yaaayyy! My very first attempt to make low carb high fat no bake cheesecake was a 75% success! I am very happy with the results, because I didn't even had the right ingredients. Will surely make another, and will provide the recipe to it, it might come handy. I saw quite a few other cheesecake recipes but all of them required the oven. This no oven solution is great for those who like me for a while, for some reasons (was broken but now it isn't any more) can't use the oven.
The crust- bottom of cheesecake- usually was made from biscuit, sugar and butter. I replaced the biscuits with almonds, cashew and coconut and the sugar with sucralose artificial sweetener. I have an old school meat grinder, I used that for the nuts and almond, and I put the resulting "flour" like material in a pan, without anything else to make it a bit brown (watch out not to burn it) After this I put melted butter and the artificial sweetener as I would have for the biscuit bottom.
From here the recipe should have followed it's normal course... but because of the lack of cream cheese I usually use, I had to invent from what was in the fridge. I used some remaining mascarpone, some yoghurt, 2 eggs and a little bit of ricotta like cheese. The result is tasty, however the texture is different from what I usually make.
Anyway for attempt nr. 1 I am very happy with the results, and soon will make a "real" one :D with all the right ingredients.

Close to give up freelancing
I had a nervous breakdown a few days ago... It is very hard to express it. I love my job, I love what I do and the fact that I can ... could work from home. It doesn't bother me to stay in for months and weeks and only go to shopping once in a while. But what bothers me exceptionally is the fact that I am working my ass off, 12-16 hours a day for a basic living! And that is not okay. It is not okay to go and sped 4-5 hours just sending the biddings for the jobs and not even getting a single reply. Many would say it is my fault... and maybe it is, but my offers are always honest, hand written and only apply to jobs that I am capable to do it. And even if somebody replies the expectations are so damn fucking unrealistic that I better not accept the job. Because no fuking way I am going to build a huge webshop for 30 bucks, no matter how nice looking you are.
What many people forget is the simple fact that I am not an EMPLOYED person when I do freelancing work. If I work for you, I work for a certain amount of money to do a certain amount of tasks. And even if I find fairly good clients, who pay a little bit more, sooner or later I find myself in the position of a "full time worker" except I am paid as shit... as a freelancer. So for fuck sake if you want a full time worker than be nice and pay as much as you would pay for a fill time worker, and if you pay me for 2-3 hours than expect that I will work maybe 4 but no way I am going to pull a 8h/ day for many many days.
But a lot of people who hire freelancers don't really understand this. Or many of them do understand, but just don't care, because they found a good worker who works for shitty money, does the job, because he/she might be afraid to loose a good client.
Well not any more.
I am sick and tired of all this and I am considering to implement some changes. First of all I want to spend those 12-16 hours to work on projects that are MINE not a fucking site that will cut me off from everything half a year later, when the dear owner finds a new pet freelancer who works for half of what I work.
And than are the clients who have no idea what they want... copy this from here, copy that from somewhere else... want some things that are way fucking complicated than it seems at the beginning and of course they want it now, at the very same moment...
I wish I had a better source of income... something that keeps me afloat while I do the transition... dunno maybe it's time again to go and buy a fucking lottery ticket and win it this time.
