Have you tried young jackfruit yet? 😊 My favourite way to eat it is in salads and pasta dishes seasoned as “tuna” 🐟 - just mix in some seaweed powder (wakame, dulse or kelp) and Italian herbs (oregano, thyme, marjoram, rosemary, basil) for that sea taste. 🌊💙 (Anzeige/Verlinkung)
For this salad I mixed sprouted quinoa, cooked chickpeas, cucumber, tomato, parsley, bell pepper, radicchio, lemon juice, hemp oil, onion, dried plums and canned young jackfruit from @naturescharm - easy & simple salad idea for a light lunch or dinner. 😋
Alexa @alexasearth & me are on the plane to Costa Rica now. ✈️ Everything worked out fine - we just forgot to book vegan food in advance so I packed 4 Tupperware boxes and a bag of snacks as meal prep for our 14 hour flight. 😄 We only slept 3 hours so we’ll probably sleep most of the time but also watch movies and just relax. I also brought a book with me and my laptop so I can edit some pictures. 👍🏼 We will spend the next 4 weeks in this tropical country 🌴 and we are both sensing that this trip will be transformational for both of us. Our first stop is the minimal waste festival @envisionfestival where we will be camping, dancing, doing yoga, connecting, healing and co-creating for 5 days ♥️🏕🌞 I can’t wait to share some impressions with you in my stories.
