This week from the road.......Pizzeria Mozza!
I was able to enjoy some amazing food at the recommendation of my brother-in-law, Michael Mckinnley. We had a family outing at a restaurant called Pizzeria Mozza, which opened right after I moved from Los Angeles to Nashville.
To have lunch with my sister, brother-in-law and nephew was good enough for me...but a PIZZA lunch?! Awwww, Yeah! You can never go wrong with Pizza in my opinion, but Pizzeria Mozza is OFF THE CHARTS! I started with the Olives Forno. They come in a ceramic baking dish and are warmed in a wood fire oven with olive oil and a single chili pepper. If you haven't had warmed olives before I'd venture to say you aren't truly living! For my main course I had the Mozzarella di Bufala tomato with genovese basil & extra virgin olive oil. Sounds simple, right? Simply mind blowing! The ingredients are so fresh and tasty that I felt surprisingly light after eating the WHOLE pizza. Feeling light after eating pizza?? That's an oxymoron I know. But trust me it's possible and it happened to me at Pizzeria Mozza. They have perfected their crust so anything you decide to put on top of that crispy, scrumptious bread will delight your taste buds!

The Squash Blossom Pizza (their most popular pizza)

When Baking Bread Goes Wrong.... I Have The Solution!
I saw this recipe for cheddar dill muffins. Sounds amazing, right? Well, I don't know where I went wrong but these came out dry, dry, dry. I hate wasting food so I had to figure out a way to make lifeless, cardboard texture muffins into something tasty.
Then it hit me.... CROUTONS! It's crispy dry bread!!! I love croutons for salads soups or just to snack on. Phew.... Wasting a full tin of muffins would have put me in a bad mood!
Here's what I did and they turned out AMAZING! Keep in mind you can do this with any bread that's about to go old or already stale
Cut into crouton sized cubes
Place cubed bread on a baking sheet and toss with a light layer of olive oil and any other herbs and seasonings you would like.
I used 2 muffins cut into cubes
1 tsp. of garlic powder
1 tsp. of salt
2 tbs. of parmesan cheese
Toss all together for an even coat and place into a preheated 425 degree oven. Bake 4 min. Pull out of oven, turn croutons over or shake baking sheet. Place back in the oven another 4 minutes. You'll know they're done when the sides are browned and crispy.
ENJOY! I cubed the leftover 8 muffins and placed them in a baggie and tossed them in the freezer. When you're ready for more croutons pull them out of the freezer and follow the same recipe. You don't have to let the bread defrost!

The Best Broccoli EVER!!!
My 3 year old nephew asks me to make this for him. Enough SAID! Try it!
2 heads of Broccoli
3-5 TBS. olive oil
salt and pepper to taste
lemon juice of 1 lemon or to taste
parmesan cheese (optional)
4 cloves of garlic (thinly sliced)
Make sure you broccoli is super dry! Cut Broccoli into florets, toss with olive oil, salt, pepper and sliced garlic cloves. Preheat oven to 425. Roast in oven for 20-25 minutes tossing half way through. Cook until crisp yet tender. Some of the florets should be browned on the outside. Once done, remove from oven squeeze lemon juice on top and sprinkle with cheese.

My Time In Asheville, NC
I have to say, I have traveled a lot due to the radio tour and just having awesome parents that spent money on experiences and not new cars or big houses. There are a lot of cities and towns that I love but, Asheville blew me away. I had been there a couple times but never got to explore the little, big city. I pretty much went vacationing after I opened for Jamey Johnson at the Orange Peel. So, If you are ever driving through Asheville or have a couple of days to spend there, here are my recommendations.

Float down the French Broad River with a tube and a cooler full of beer! We did this with all of our friends and it was a relaxing yet excitingly fun adventure. Bring your own tube or rent a tube, it's completely free. Put in 2 miles up river or 3 miles, jump in and let the water take you away. For the next 2 to 3 hours there's no phones, no distractions just hanging and drinking with friends. Your ride ends at a bar called The Bywater. They win the coolest bar award by me. 18 beers on tap with most of them local. Outside they have a full acre to do whatever you heart desires to do... Pickin guitars and singing songs with friends, play horseshoes or corn hole. They are so laid back you can even bring a cooler and have your own BBQ. Check out their website http://www.bywaterbar.com
Last thing! Take a stop off in Black Mountain. It's close to Asheville and it's one of the last downtown Main Streets that are left. Most places are mom and pop owned and you will find almost every vendor sells Made in America products. LOVE IT!!

It's a rainy 4th of July here in Nashville, TN. No grilling or smoking happening today. But, not to worry! I have the best indoor oven recipes for when you have to move your outdoor party inside. This is also just great for any ole dinner. The first recipe is for pulled pork. I got this recipe from my sister Jamie Watkins who is an amazing cook.
JAMIES OVEN PULLED PORK
First find your favorite dry rub. I will post a recipe for mine in a blog to come. For this pulled pork I went to my favorite BBQ restaurant, Baby Blues, where I used to work and asked to purchase some of their dry rub. They are so awesome to me, they just gave me some. Was hoping to get the recipe but I'll take what I can get!!! Most places, especially if family owned, will allow you to purchase some, all you have to do is ask! If you don't have time to make your own, it's the best way to get the tastiest dry rub without all the chemicals that are found in store bought brands.
Ingredients:
5 LB. Pork Shoulder
Your favorite dry rub
1 yellow onion sliced into rings
salt
brown sugar (optional)
Preheat oven to 250
Place sliced onion rings on bottom of a large baking dish. Sprinkle pork shoulder with salt then heavily RUB (massage) dry rub ALL over the pork shoulder. You should use so much dry rub that all you see is dry rub on the pork and no longer the meat. Don't forget to get inside all the flaps!! Place FAT side UP and cook for 8 to 10 hours or until a thermometer reads 190. I know pork is done at 170 but, if you want that pull apart pork you're gonna want to get it to 190 or even 200. Pork is great to slice at 170 but not ideal to get the best pull. Once cooked pull it out of the oven and let rest for at least 20 minutes before you start pulling. If you like a sweeter pork, once you finish cooking, take it out of the oven and add about half a cup to 3/4 of a cup of brown sugar on top of pork and place into a oven on broil until a crust is formed. If you have the time I recommend brining but, its not completely necessary. But here's that recipe in case you do want to take your pulled pork to the next level.
Brine Solution
1/2 cup salt 1/2 cup brown sugar 2 qts cold water 3 tbsp dry rub mix 2 bay leaves
Add salt to cold water and stir very well until all the salt is completely dissolved. Then add the brown sugar and dry rub and stir well to combine.
Rinse the pork shoulder in cold water and place in a 2 gallon ziploc bag (or a container big enough so the shoulder is completely covered in brine solution).
Add the 2 bay leaves and pour in brine solution.
Refrigerate at least 8 hours
Remove from brining solution and be sure to pat the skin completely dry before you put on the dry rub to get that crispy crust.
Wine tasting at the Biltmore. #fancy fun. Minding my manners! :) I went with the Sauvignon Blanc. My favorite!!!! It's sweet but, not too sweet. Just right! I like to make White Sangria with it!
Here's my recipe
1 diced peach
1 diced apple
1sliced lemon
1 sliced lime
1/2 cup OJ
1 Can of Sprite
1 Bottle of Sauvignon Blanc
Squeeze lemon and lime into pitcher and throw in the rinds. Chop peach and apple into small cubes and throw into pitcher (I leave skin on). Add the rest of the ingredients, mix together and serve.

They drove all the way to Asheville to be a part of my first solo performance since the split of MWB. They are the truest form of real genuine kind people.
