This Jamaican Curry Beef is a tasty and comforting dish made with vegetables and tender beef that smells great. This is a hearty meal that is great for a cozy evening.
Ingredients: 2 lbs beef stew meat, cubed. 3 tablespoons Jamaican curry powder. 1 onion, chopped. 3 cloves garlic, minced. 1 teaspoon fresh ginger, grated. 2 tomatoes, chopped. 2 potatoes, peeled and cubed. 1 carrot, diced. 1 scotch bonnet pepper, minced optional for heat. 2 cups beef broth. 1 tablespoon vegetable oil. Salt and pepper to taste.
Instructions: In a bowl, mix the beef with Jamaican curry powder, salt, and pepper. Let it marinate for at least 30 minutes or overnight in the fridge. In a large pot, heat vegetable oil over medium heat. Add the marinated beef and brown on all sides. Add onions, garlic, ginger, tomatoes, potatoes, carrot, and scotch bonnet pepper to the pot. Cook for 5 minutes, stirring occasionally. Pour in the beef broth, bring to a boil, then reduce heat to low and simmer covered for 1 to 1.5 hours until the beef is tender and the sauce has thickened. Adjust seasoning with salt and pepper if needed. Serve hot over rice or with Jamaican dumplings.
