Bok choy is stir-fried with garlic and ginger and then covered in a savory soy sauce mixture. This is a simple and tasty vegan dish.
Ingredients: 1 lb bok choy, rinsed and chopped. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 1 tablespoon minced garlic. 1 tablespoon minced ginger. 1 teaspoon cornstarch. 2 tablespoons water. 1 tablespoon vegetable oil.
Instructions: Put garlic, ginger, soy sauce, and sesame oil in a small bowl and mix them together. Mix cornstarch and water in another small bowl. Put the vegetable oil in a big skillet and heat it over medium-high heat. Stir-fry the bok choy for two minutes after adding it to the pan. Pour the soy sauce mix over the bok choy and toss it around to coat it all. Put the lid back on and cook for two more minutes, or until the bok choy is soft but still crisp. Stir the cornstarch mixture into the sauce for about one minute after adding it to the pan. Warm up and serve.
