Hello Autumn 🍂 Like much of the last two years, it has seemed endless, tedious and dragging, and yet has flown by in a blink of an eye. It can be hard to see and feel the progress you’ve made or maybe even to face that it’s been slower than you’ve liked. Autumn is such a great season to reflect on these things without the pressure of New Years Resolutions or birthday dread (well I guess unless your birthday is in autumn lol) I’ve been at a standstill these last couple years but life must go on and it’s time to set some new goals for myself. Picked up an old ladder from someone off FB today to try and give my cat something a bit taller to climb on. I think I’ll need to get some wood to make the rungs thicker and some sisal to wrap some of it so he feels more sturdy climbing it. Pretty breakfast waffles! I got this idea to make pink waffles when I was thinking about making strawberry banana waffles the other day. I wondered if the strawberry purée would turn them pink. Turns out the batter is too light for that. But after googling I found you can tint your batter pink with beets! Unfortunately I couldn’t find any beets at Trader Joe’s yesterday but oddly enough Target had some freeze dried beets in the snack aisle so I bought them and ground up with a mix of raspberries and strawberries and that did the trick! I added a bit more ground beet powder as I went on to make them darker.
