The finished product. After all the magic of proofing and shaping (see the previous post), it was time to complete the pita. I heated a couple of cast iron skillets. I added the pita loaves one at a time, heating until they reached pita perfection. The final products were pillowy, delicious, and so satisfying.
Last night I tried my hand at making pitas. I loved working with the pillowy dough, which started with a sponge (a small amount flour, water, sugar, and yeast) which mingles and bubbles for about 30 minutes. Then more flour, salt, and olive oil and on to the first rise of about 60 min. Punch down the dough and let rose another 30 min. At this point, it was time to divide the dough and roll into small balls (the first pic) and allow them to rise for 30 more minutes. Next, roll out the dough to form the round loaves (second pic) and give them yet another 30 minutes of proofing.
What a marvelous evening with our dear friend @deniselnorton! Lively conversation, delicious food, tasty wine, and lovely weather all add up to a great night!
Alignment Allsorts. While meandering on a walk through Berwyn’s Depot District, I happened upon this scene. I couldn’t pass up the juxtaposition of an auto body shop and a chiropractor. And that sky was quite photogenic on top of it all!
Happy Times. While on an evening walk, I happened to look down an alley and saw a stack of albums. I decided to investigate and as soon as I saw this scene I KNEW I had to make an exposure.

I have definitely been bitten by the bread baking bug! These are three rye loaves from last weekend. The top two were made in a loaf pan, one with coarse sea salt, the other without. The bottom one was a rye boule, with coarse sea salt on top. #bread #breadbaking #ryebread
