I always loved a simple egg in the hole, or what I called egg in the bird's nest, growing up. Butter a piece of bread, use a cup to cut a hole in the middle, place bread in a hot pan, then crack an egg in the middle. Like that too? Try using a bagel (I used a Thomas's Everything Bagel) instead of bread! Cut away a thin slice from both the top and bottom of the bagel so you have a flat surface to soak up your butter (I also love using Brown & Brummell spread). Next, cut away more of the hole so you have a larger space for the egg. Then, when it's time to crack the egg you may need to flatten the bagel slightly with the spatula so the egg spreads and covers the surface of the bagel a bit. Watch it cook and brown, then let it finish to your liking: over easy, medium or hard. Serve and enjoy!

Well hello there, dear reader(s). Iāve been informed that I havenāt posted in awhile. I guess that means someoneās checking this thing, eh? Why, thank you!
I must say, what started off as an easy way to keep family, friends and non-Facebook connections updated on our move to the West Coast turned into an afterthought once āreal lifeā kicked in. (A.K.A. I got a job.)Ā
Thatās no excuse though, so Iāll resume my efforts forthwith and try to keep you entertained with more ātidbits and tales from a Chicago nativeā whoās really enjoying her first Californian winter. Let me say, the colorful leaves on my doorstep are a welcome change to the fluffy white stuff. (Though Iām looking forward to hitting the mountains soon for ski season!)
