I've just seen those vegan brownies you made, have you got the recipe as I couldn't find anything?
OREO VEGAN BROWNIES
- ingredients needed:(makes around 8-10 large piece or tbh u could just knock urself out and eat it from the pan)
1 cup (170g) pitted dates -softer and sweeter the better!
¾ cup (180ml) coconut milk (thicker the coconut milk the creamier the brownies!)
1 ½ cup (170g) all purpose flour- u have use buckwheat and brown rice flour before so u can play around with this
½ cup (50g) cocoa powder
½ tsp of salt
¼ tsp baking powder
¼ tsp baking soda
55g unsweetened vegan chocolate (dark is best!!!)
½ cup (120ml) of coconut oil
¾ cup (150g) soft brown sugar (u could maybe use coconut sugar but I’m pretty sure normal makes a better brownie)
3 bags of mini oreos (or even just crush up a bag and throw it in, the more the merrier)
1 tsp of vanilla essence
Pre-heat oven at 180 degrees.
Put the dates and ¼ cup (60ml) of water in a sauce pan and bring to a boil. Leave to simmer over a low heat for 2-3 minutes (this makes them softer to bring out the sweetness a little more). After this blend the cooked dates and add coconut milk until smooth. Then melt the chocolate and coconut oil on a low heat, then add the sugar, vanilla essence and date mix. Blend again to make sure its all smooth and lovely. In a different bowl mix the flour, cocoa, salt, baking powder and baking soda.
Slowly stir both mixes together until fully combined and add in 2 bags of mini oreos. Coat the baking dish with oil. Bake in the oven for 15 minutes, then scatter oreos over the top of the brownies and put back into the oven to cook for another 5 minutes or until there is a slight crisp on top but the middle is still soft and yummy.When cooked leave to cool on a rack! enjoy!!!!!!!!!!!
