The most important meal of the day ☀️
Sweet cottage cheese bars with chocolate glaze and fresh berries
For the glaze:
100 grams chocolate of choice (I recommend 72% dark chocolate but you can use milk chocolate as well)
20 grams unsalted butter
For the filling:
250 grams cottage cheese
180 grams condensed milk
100 grams unsalted butter (room temperature)
Instructions:
Prepare your forms. I used simple silicone rectangles but you can switch to any other molds or just cupcake liners.
Melt the chocolate in a saucepan over medium heat and add butter, make sure everything is properly mixed.
With a clean paintbrush or a silicone brush lightly cover the forms with chocolate. You can repeat this process a few times to get the thickness you like (leave some chocolate for later to cover the bottom of your bars).
Put your forms in the fridge to set while you make the filling.
This step is optional but I always press the cottage cheese through a metal strainer for smoother texture.
Mix the butter until smooth and pour in the condensed milk, mix well, add the cottage cheese and mix again.
Fill the cold forms with your filling. Heat the chocolate again and brush over the top.
Put the forms in the fridge overnight to set (or at least 3 hours). For easier removal I put the forms in the freezer for 30 minutes before popping them out.
Plate with fresh berries and enjoy!
