I have now used up all of the strawberries that I had in the fridge. None of them went to waste. I made these very simple strawberry muffins where all the ingredients are mixed in one bowl. Topped them with something I’m going to call Streusel (had the mixture in the freezer) - sugar, butter and oats.
Strawberry Streusel Muffins
What you need: ¼ cup coconut oil ½ cup milk 1 egg ½ tsp salt 2 tsp baking powder ½ cup white sugar 1 cup all-purpose flour ¾ cup oats 1 cup chopped strawberries
What to do: Preheat oven to 375 degrees F line an 8 cup muffin tin with paper liners. In a small bowl, combine oil, milk, and egg. Beat lightly. In a large bowl, mix flour, salt, baking powder and sugar. Toss in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together. Fill muffin cups. Bake at 375 degrees F for 25 minutes. Cool 10 for minutes and remove from pan.

Blackberry and Peach cobbler happening in the kitchen today. With the abundance of fresh and juicy Ontario peaches available, this is a must do. Don’t you just love the fragrance of fresh peaches?

My version of Blackberry and Peach Cobbler
What you need: 2 tbsp cornstarch 1 ½ cups plus 1 tsp sugar 1 cup blackberries 1 cup raspberries 6 medium peaches pitted, and cut into chunks 1 tsp vanilla paste 3 cups all-purpose flour 1 tbsp baking powder 1 tsp salt 1 cup cold unsalted butter, cut into ½-inch cubes 1 cup plus 3 tbsp whole milk
What to do: Put oven rack in middle position and preheat oven to 425°F. Butter a 10 inch round and 2 ½ inch deep pie dish. Whisk together cornstarch and 1 ½ cups sugar in a large bowl, then add blackberries, raspberries, peaches and vanilla paste and toss to combine well. Transfer to pie dish and bake until just bubbling, 10 to 15 minutes. While fruit bakes, whisk together flour, baking powder, and salt in another large bowl, then blend in butter with your fingertips until mixture resembles coarse meal. Add milk and stir just until a dough forms. Cut the dough with a round cookie cutter and place onto hot fruit mixture in 12 mounds. Sprinkle dough with remaining teaspoon sugar. Bake cobbler until top is golden, 20 - 25 minutes. Serve warm.
If the cobbler is baked ahead and cooled, then let it stand at room temperature for a while and place in a low oven to warm.
