I just finished my last class and my last cake at Le Cordon Bleu MSP. And it has been great. This final was to make a wedding cake and here she is! I couldn't be more proud of myself on how it turned out. The cake is chocolate with a strawberry Bavarian cream with fresh strawberries in it and covered in Swiss buttercream then fondant. All the flowers are gum paste and hand made by me. The stargazer lily was something everyone had to make and put onto their cake, but the rest of the flowers we could pick. I make a rose, two Calla Lilies, two black poppies and a bunch of tiny random flowers. The silhouettes are made out of pastillage that I airbrushed in black. The boarder is made of gold fondant pearls. I was going for a very classy vintage wedding cake. How'd I do?
All handmade and I did air brush work on the sides. This is not my best work in my opinion but I love the PowerPuff Girls and I couldn't resit for a kids cake in class. It's a sponge cake with a ganache fillings and Swiss butter cream covered in fondant.
This was my sugar sculpture made entirely out of poured, blown and hand pulled isomalt sugar. It was about two feet tall and roughly four pounds. This was my idea of a koi fish pond with a lotus flower and two koi fish.
I haven't been posting much these last couple weeks because we've been making candies. Which goes with this 4lbs Chocolate Sculpture. It's all chocolate and edible. I used luster dust to color this Pokémon, Oddish. The flowers are made of modeling chocolate. The base is ground white/dark chocolate mixed with cocoa butter to give it the marble look. Got a 48/50. Pretty good for a final, huh?
