Cauliflower rice sushi - 255 cal
200gr cauliflower rice (50)
50gr philadelphia light (76)
2 nori sheets (20)
2tbsp rice vinegar (3)
55gr carrot (18)
50gr sockeye smoked salmon (72)
1.5 tbsp soy sauce (16)
Fry the cauliflower rice and add philadelphia, rice vinegar, and 0.5 tbsp soy sauce (the remaining tbsp of soy sauce is for dipping). Stick mixture in the fridge until cooled and proceed to make sushi as you would normally.
Sidenote: I used a weird type of soy sheet instead of the usual seaweed nori because I thought it looked fun, the calorie count is 26 for three of those sheets :)
(Also, I know my sushi rolling/cutting skills are lacking, this is my first time!)
