I cannot believe it is one year ago since I created this upgraded green beans salad! It was a sure hit for all the taste buds at Thanksgiving. 😋 The taste buds were all happy it was not green bean casserole and so was mine 😋

Green Beans

Bacon 🥓

Herb Citrus Rub for Roasted Turkey Breast or the Whole Turkey:

This is one of the best ways to use my herbs that are still in my garden.

This is how I made it:

1 stick unsalted butter at room temperature

2 tablespoon olive oil

4 cloves garlic

1 tablespoon fresh thyme

1 tablespoon chopped fresh sage

1 1/2 teaspoon chopped fresh rosemary

1 tablespoon sea salt

1 tablespoon black pepper

1 tablespoon JCS escallion, garlic & allspice mixed (You can find this herb mixed @ Amazon)

Instructions:

Put all the ingredients Into a spice blender or a regular blinder and blend until all ingredients are incorporated almost to smooth texture.

Using your fingers to loosen the skin on the turkey breast to creat a pocket. Then spread half of the herb butter mixture under the skin.

Spread the other half herb butter mixture over the turkey and sprinkle with black pepper and salt, to taste. Best to do this the night before cooking and let turkey remain refrigerated.

Let turkey stand at room temperature for 30 minutes before cooking. (I learned this technique from the Food Network).

For the citrus:

Cut one orange 🍊 in half

Cut one lemon 🍋 in half

Put cut sides up of both lemon and orange in baking pan with turkey. Also, place turkey breast side up.

Cook turkey according to directions. Sometimes the cooking directions are on the turkey packaging, or ask the butcher at your grocery store.

When the turkey is done, squeeze some of the juice from the roasted orange and lemon into the gravy. Or you can use the juice to make a citrus lemon butter sauce to serve with your turkey.

Peach Spiced Coffee Cake With Coconut Whipped Cream:

I baked this peach coffee cake for our weekend breakfast and paired it with peach, mango and watermelon smoothie, yum. It may look like dessert for breakfast, but there are a few fruits added to this delicious break the fast...!

I will do a different post for the Coconut whipped cream. This Coffee cake recipe is from a mango cake recipe that I have posted sometime ago. I substituted the mango for peach and added a little twist.

For the coffee cake:

2 cups all purpose flour

2 cups sugar

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp Kosher salt

1 tsp freshly grated nutmeg or ground nutmeg

1 stick butter

1 cup buttermilk

2 eggs beaten

1 tsp vanilla

1 tsp almond extract

3 cups peeled roughly chopped peaches

For the topping:

1/3 cup sugar

3/4 tsp cinnamon

Preheat oven to 350 degrees. Grease a 8 1/4" square glass baking dish, set aside.

In a large bowl combine flour, 2 cups of sugar, baking soda, baking powder, nutmeg and salt.

Dice butter and add to flour mixture. You can use two knives and continue to cut the butter or use clean hands until flour mixture resembles coarse crumbs.

In a small bowl combine buttermilk, eggs, vanilla and almond extract, whisk until all incorporated. Add the flour mixture all at once to the wet ingredients, stir until just moistened. Fold in the peaches. Spread in prepared baking pan.

Combine the cinnamon with the 1/3 cup sugar and sprinkle evenly over batter. Bake for 40 to 45 minutes or until toothpick Inserted into the center comes out clean.
