I keep forgetting to do updates here. It's day 111 of my becoming a baker adventure. I'm on my second work place experience and this one is such much better than my first. Starting to feel a bit monotone as you do the same thing every day but everyone is nice and takes their time to help you. And I feel a bit more confident and comfortable with certain tools and such so it's work. Last week and them back to school for a bunch of tests. Pictures are stuff I baked last week.

Day 70 of Bakery School

Twenty five of work experience. I would eventually clash with this woman if I wasn’t there for a short time. Getting such bully vibes from her. I don’t want to work at a place this. Unsure what I have learned other than that. A little concerned that I’ve fallen behind in my education. It will be interesting to hear of others experiences on Friday when class meet before Christmas. Need to finish my homework, I have two things to write.

Day 68 of Bakery School

Twenty three of work experience. Mixed day, started off cleaning and bunch, then I got to make some princess cake and Budapest… and then I went home. Need to fill out some papers and have my mentor sign it. Feels like it will take longer to get done than it should.

DAY 67 Twenty two of work experience. I did get to do a new things to day, nothing major but one part of a cake that I haven’t done before. I am wondering what to write on my list of bakes that I should be judged on… I haven’t really baked that much so, don’t know what to do. I have four more days to go so how much can I squeeze in with a reluctant crew?

Days 65 and 66

Nineteenth of work experience. A little of what my teacher said yesterday stuck with my “mentor” and we attempted to make a mousse… and failed. I was also making a semla filling at the same time. Don’t know what happened, speculations that it was whole egg instead of just yokes for the pate a bomb but who knows, second time went better.

11/12 I got to do some decent things today but I felt off and like everyone was just tolerating me being there but wished I wasn’t. I think I was just tired and over-thinking it

Day 64 of Bakery school

Eighteenth of work experience. Mentor was there and only one available for the meeting. It went okay, still unsure how the grading will go but… It was nice to see my teacher and she reassured me that she believes in me and that felt good. She mentioned that she had made a note that this place might not be ready for students in awhile and that she’d make an effort to make sure the next spot was better.

DAYS 62 & 63 of Bakery School

Sixteenth and seventeenth of work experience. Totally forgot about yesterday. A little less fun without l, same today. Tomorrow I’m supposed to have a meeting with my teacher and my mentor but not sure how this will go. My teacher wants the mentor or someone who’s worked with me the most and my mentor is not it. Is she even there tomorrow?

Day 61 of Bakery School

DAY 61 Fifteenth of work experience. Friday! Made so many cakes today, not all of them good and use sure to why. It’s going okay. Will miss one of the people that is off for a month and not there for the next two weeks and she’s made sure I get to do educational stuff. Need to stay on top of things without her.

DAY 60 Fourteenth of work experience. Got to do some fun things today, semlor and budapest (and pack a bunch of more gingerbread dough). Hygiene was really lacking today, seen some stuff before but today was poor. Ready for the weekend.

Saffron semlor, (a round bun with almond paste filling, whipped cream and sprinkled with powdered sugar) lots of them... (not feeling all the saffron at the moment, everything is saffron. I want my lusskatter but then I'm done with saffron).

And a Budapest but it was a finished meringue from the fridge. Not a lot of baking happening.

And from a few things I saw today... maybe not buy stuff. I was pretty disappointed.

Day 58 & 59 of Bakery School

Twelfth and thirteenth day of work experience. I don’t remember much from yesterday other than it was a good day. I was so tired. Today was good until lunch when the rest of the crew was off on a meeting and I was left alone packing gingerbread dough. But I feel like most people likes me and try to help me so it’s okay.

Day 57 of Bakery School

Eleventh day of work experience. Best day so far, by “ignoring” my mentor. It has basically taken 2 weeks to find my feet and I have started to get more feedback and help, so knock on wood for the final 3 week to be okay

Day 56 and 57 of Bakery School

Nine and ten of work experience. I’m not much for trash talk but no one likes the boss, aka my mentor. I have realized that she doesn’t have the skills and I ask other people for help instead and they seems to understand that I want to learn. Feels like my way in but I feel sorry for the boss. She seems lonely.

Day 55 of Bakery School

Eight day of work experience. One of my classmates was asked to leave from her place. Did get some pointers today… semi optimistic. Thought it was Thursday and got excited. Oh well… PS. my princess cake is better than my mentors.
