I always understood it as it being two things at the same time.

The first being that it is dissecting. I think In-ho genuinely cannot comprehend that Gi-hun cares about those people’s lives. So he studies Gi-hun to see if it truly is a facade of some sort. And when the facade does not break, he gets the urge to dig deeper and deeper.

At the same time, I think he does admire the genuine pain/distress Gi-hun feels at moment. Like aesthetically he finds it fascinating, so he wants to witness it.

So he both questions and admires. At least in my mind.
