Have you ever had problems with your matcha clumping? Matcha is very fine and delicate and when exposed to moisture it clings to those water particles. Even the highest quality matcha can clump when not prepared or taken care of properly. Many things can contribute to clumps in matcha. • Not sifting your matcha first • Improper bamboo whisking technique • Trying to whisk too fast at first (bamboo and electric whisk). Start slow to combine and then speed up. • Exposing your matcha to moisture and oxygen for extended periods of time. • And of course low quality or old matcha. One of the best ways to get rid of clumps is to make a paste first! Before whisking your matcha, make a paste first. After sifting your matcha into a bowl, add a very small amount of water and use the back of a spoon to press into it. Combine until a smooth paste is made. Add a 1/4 cup of water and whisk your matcha as you normally would. Make your matcha drink as your wish. Give your matcha a little TLC - 5 things your matcha hates and tips to avoid them. 1: Light - The presence of light starts to break down the chlorophyll and many of its other nutrients leaving it a dull color. 🍵 Solution: Leave matcha in its airtight container and stored in a dark place. Avoid storing in glass. 2: Heat - Heat exposure will start to cook the matcha and strip its nutritional content and fresh taste. 🍵 Solution: Keep dry matcha away from heat. Store matcha below 70°. Only store unopened cans of matcha in the fridge or freezer and set out for 6 hours before opening to prevent condensation buildup. Prepare your matcha between 130°-170°. Temperatures above 175° will make your matcha taste bitter and will yellow it’s color. Whatever you do, do not boil! 3: Oxygen- Oxidation starts once Matcha leaves are harvested and increases when matcha powder is exposed to oxygen and other elements. Oxygen will cause matcha to lose its vibrant color and will break down the oils that give matcha it’s unique taste. 🍵 Solution: Keep matcha closed in its airtight container. Leave oxygen absorber in Matcha until can is empty. Matcha Organics Japanese Ceremonial Matcha comes sealed in a separate mylar foil package with oxygen absorber inside its airtight tin can to ensure it stays just as fresh as the day it was harvested when you open it up. 4: Moisture - moisture from air and condensation will cause matcha to clump and degrade. 🍵 Solution: Avoid storing matcha in your fridge door as the constant opening and closing of the door can cause condensation buildup. In humid climates keep matcha can completely closed until ready to use and completely close it when done. 5: Improper whisking will cause Matcha to taste bitter, have a clumpy texture and settle too quickly in your beverage. 🍵 Solution: Whisking is extremely important to a great matcha. Not only does whisking mix and froth your matcha it activates and releases its great nutty and sweet flavors. We recommend using a bamboo whisk or an electric hand whisker. When whisking make sure your water is lukewarm. ✔️ Buttermilk Matcha Pie in the oven! 🍵🥧 RECIPE BELOW! A little Matcha Organics twist on Granny’s buttermilk pie recipe. Marbled Matcha Buttermilk Pie Yields 2 pies INGREDIENTS • 2 TSP Matcha Organics Matcha • 1 1/2 cups granulated white sugar • 3 eggs (beaten) • 1 stick or 1/2 cup of salted butter - melted and cooled • 2.5 tsp. vanilla extract • 1 tbsp. of lemon juice • 1 cup buttermilk • 1/2 tsp. ground nutmeg • 3 tbsp. all-purpose flour • 2 pie crusts prepped in pie pan or dish. We used pre-prepped roll and unroll band full pie crusts. INSTRUCTIONS • Preheat oven to 350° • Mix sugar, beaten eggs, cooled melted butter, vanilla and lemon throughly. • Add buttermilk, nutmeg and flour. Mix until we’ll combined. • And about 1/3 if the filling to a separate bowl. • In the 1/3 filling sift in Matcha Organics Matcha and mix throughly. • Pour your classic buttermilk mixture into pie shells evenly. • To each pie: Slowly pour in matcha mixture over buttermilk mixture in a horizontal zigzag pattern. Use a toothpick to move the matcha in a zigzag vertically to create a marble pattern. • Bake for 50 to 55 minutes. Matcha White Chocolate Macadamia Brownies RECIPE BELOW!⁠ ⁠ Matcha White Chocolate Macadamia Brownies⁠ ⁠ INGREDIENTS ⁠ • 1 tsp baking soda ⁠ • 2.25 cup all purpose flour⁠ • 2 tbs Matcha Organics Matcha ⁠ • 1/2 tsp salt⁠ • 1 cup butter⁠ • 1.5 cups sugar⁠ • 2 tsp vanilla extract ⁠ • 2 large eggs⁠ • 1/2 cup chopped macadamia nuts⁠ • 1.25 cup of white chocolate chips ⁠ • 9x9 inch pan⁠ ⁠ DIRECTIONS ⁠ • Preheat oven to 375 degrees and prepare a 9x9 inch baking pan with foil or parchment paper.⁠ • In a medium mixing bowl, whisk together flour, Matcha Organics Matcha, baking soda and salt.
