Trying-Not-To-Beat-The-Shit-Out-Of-My-Client Shishito Peppers

It was one of those nonstop appointment days, one petulant client after the other (wedding planning is nothing like that goddamn BS J.Lo movie that everyone and their mom still brings up to me), but thankfully these simple & quick Shishito peppers kept me from thrashing the fuck out of my 3 o'clock bride to be.

On our site visit to an gorgeously overpriced hotel, I feigned a bathroom break and made a run for the kitchen. With my farmer’s market peppers in my bag (a handful only cost me two bucks), my girl Lupé quickly snuck me in and I made a fast batch of seared magic.

A little vegetable oil, toss 'em around on high heat for a few minutes, squeeze of lemon (yuzu if you’re extra awesome), and liberally sprinkle with sea salt.

I-wish-my-client-would-stop-lying-to-me-kale-salad

Its really hard to find time to eat when you are fighting against so much social injustice. It's even harder when your client refuses to tell you the truth. The other day I asked my client how many cats she had. I explained that the landlord accused her of having an overpopulation in her apartment. For one hour I tried to ask her twenty different ways, and every time my client insisted that she had, yup, you guessed it, only one cat.  I might be a law student rookie, but I ain't a dummy.  Worse than the lies, our interview has gone over by 30 minutes already and I had a project staff meeting in 15 minutes. My hanger was uncontrollable. I had to end the session. Thankfully, as I ran out the door that morning I grabbed Saturday's farmers market purchases: radishes, kale, avocado, lemon, and an egg...

I tore off leaves of kale - avoiding stems, chopped 2 radishes and thew them in a bowl along with a handful of pea shoots. poach that egg - 6 minutes for perfection, throw in half an avocado,  squeeze some lemon juice for dressing with a dash of salt on top. I love this effing salad so much.

Almost-Slapped-My-Boss Ricotta Pear Toast

I was forced to skip lunch because of an "urgent" memo that had to get finished in time for a stupid staff meeting.  Oh and don't worry, my idiot boss took credit for all the work.   My stomach was growling like crazy, and my hanger was about to volcano in the form of some serious workplace aggression.  Luckily I had a salad saved from a few days ago with extra ricotta, the sandwich lady left some extra bread, and I stole my cubemate's bosc pear.  The office pantry had honey, and bangs of shitty airline trail mix that fortunately contained some nonshitty walnuts to be picked out.  

Toasted the bread, smeared the ricotta cheese, threw on some pear slices, drizzled with honey, and tossed on a few walnuts.   Hanger was put in check, and I kept my job (for today).
