Spiced Apple Cinnamon Rolls-Warm Fall Treat
A tasty and moist vegan bread that is perfect for fall. The cinnamon, nutmeg, and cloves make it warm, and the applesauce and grated apple make it sweet.
Ingredients: 1 1/2 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/4 cup vegan butter, softened. 3/4 cup brown sugar. 1/4 cup unsweetened applesauce. 1 cup grated apple. 1/2 cup chopped walnuts optional.
Instructions: Preheat oven to 350F 175C. Grease and flour a 9x5 inch loaf pan. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves. In a large bowl, cream together vegan butter and brown sugar until smooth. Mix in applesauce until well blended. Stir in flour mixture until just moistened. Fold in grated apple and walnuts. Pour batter into prepared loaf pan. Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 10 minutes, then remove from pan and cool completely on a wire rack.

These baked apples are simple to make and come with a tasty cinnamon nut stuffing. They are a comforting and filling vegan dessert. They're great for fall or any time you want a warm treat.
Ingredients: 4 large apples. 1/2 cup chopped nuts such as walnuts or pecans. 1/4 cup raisins. 2 tablespoons maple syrup. 1 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground ginger. 1 tablespoon vegan butter, melted. 1/2 cup apple juice or water.
Instructions: Preheat the oven to 375F 190C. Core the apples, leaving the bottom intact, and scoop out some of the flesh to create a cavity for the stuffing. In a bowl, mix together chopped nuts, raisins, maple syrup, cinnamon, nutmeg, ginger, and melted vegan butter until well combined. Stuff each apple with the nut mixture, packing it tightly. Place stuffed apples in a baking dish and pour apple juice or water into the bottom of the dish. Cover the dish with foil and bake for 25-30 minutes, or until the apples are tender. Remove the foil during the last 10 minutes of baking to allow the tops of the apples to brown slightly. Once baked, serve the apples warm, optionally with a drizzle of maple syrup or a scoop of vegan ice cream.
